So, I just bought a bushel of fresh roasted green chiles yesterday. I followed the vender's advice and let them sit in a plastic bag "for at least 30 minutes." Well, I left them in there for several hours while I took care of other errands, and now when I try to clean the char off, the green chiles are shredding on me. So I'm guessing I let them sit in the plastic bag for too long and now they are really difficult to clean. What do I do?

They stayed within the plastic too long and the pepper flesh overcooked, and became too weak for you to peel them easily. With roasting peppers, tomatoes and such, it is important to roast them specified time, then remove them to plastic, check periodically the "sweating", test slightly before time ends to see if you can go ahead and peel them. Sometimes they may not take as long to reach the point of being able to be peeled.

Personally I would start over and roast some other peppers. But if those are the only ones you have, I might refrigerator then a short time and see if it makes the process easier. If that doesn't work, and the recipe still needs them but doesn't need them whole or diced, just slice them in half and use the back of a knife to scrap the insides out and add them to your recipe.

Have you tried working with them chilled? Sometimes vegetables firm up when chilled. Put thim in an ice water bath for a few minutes

Freeze em a little while....should be able to scrape off the char then.
