I do not remove the skin when using a crock pot for pork roast. I do try to brown the roast in a skillet to remove some of the excess fat and reduce the water used in the recipe for heavy drippings.

No..the skin helps too hold the juices in and adds lots of flavor also.. Pork Roast are great cooked in the crockpot. I take cream of mushroom, & cream of celery soups and pour over mine instead of plain water..my family loves It..

If it is skin then I would. If it is just a layer of fat then leave it on. In a ham you leave it on, since that contains many of the smoking tastes. I don't think I have seen skin on a roast though.
