Can anyone recommend a recipre for applesauce cake (especially one that would work well into cupcakes)?

Applesauce Cupcakes

Ingredients
1 cup granulated sugar
1/3 cup shortening
1-1/3 cups applesauce
2 cups all-purpose flour
1-1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
3/4 cup raisins
1/2 cup packed brown sugar
1/3 cup butter
2 cups sifted powdered sugar
1 tablespoons milk
1 teaspoon vanilla
Milk (optional)

Directions
1. Preheat the oven to 375 degree F. Line eighteen 2 1/2-inch muffin cups with paper bake cups; set aside.

2. In a large bowl, beat granulated sugar and shortening with an electric mixer on medium speed until well mixed. Beat in applesauce. (Mixture will appear curdled.) In a small bowl, stir together flour, baking powder, cinnamon, baking soda, nutmeg, and cloves. Beat into applesauce mixture. Stir in raisins.

3. Spoon batter into prepared muffin cups, filling each 2/3 full.* Bake in the preheated oven for 18 to 20 minutes or until a wooden toothpick inserted in centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Cool completely on wire rack.

4. For frosting, in a medium saucepan, combine brown sugar and butter. Cook and stir over medium heat until melted. Remove from heat. Stir in powdered sugar, the 1 tablespoon milk, and the vanilla. If necessary, stir in enough additional milk, 1 teaspoon at a time, to make spreading consistency (if frosting thickens, stir in additional milk). Frost cupcakes. Makes 18 cupcakes.

Test Kitchen Tip: �If all of the cupcakes do not fit in the oven at one time, refrigerate the remaining cupcakes while the first ones bake.


Applesauce Spice Cupcakes Recipe

1 teaspoon vanilla extract

3/4 cup applesauce
Cream cheese frosting


Directions:

In a mixing bowl, cream butter and sugar.Add eggsand vanilla; mix well. Combine dry ingredients; add to creamed mixture alternately with applesauce.

Fill greased or paper-lined muffin cups two-thirds full. Bake at 350°F for 25 minutes or until cupcakes test done. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes.

Applesauce Cupcakes

Preheat oven to 375 F. Cream margarine until fluffy. Beat eggs and
sugar; add to margarine and blend.

Sift together dry ingredients. Add to margarine mixture alternately
with applesauce, mixing well after each addition. Stir in vanilla
and nuts.

Spoon into 12 cupcake pans sprayed with vegetable pan spray or use
paper baking cups. Bake 15-20 min.

Pour the batter into pan or tins. Bake 30 minutes for an 8 inch cake or about 20 minutes for cupcakes. Yield: 12 cupcakes or 1 (8 inch) cake (9 servings).

Add to butter mixture alternately with applesauce, mixing well after each addition. Stir in vanilla and nuts. Divide equally among 12 cupcakes. Bake 15 to 20 minutes. Yield: 12 cupcakes.

In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy. In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

This applesauce cake is a tasty snack cake.
INGREDIENTS:

1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons baking soda
1 cup raisins
1 cup chopped walnuts
1/2 cup melted butter
2 cups applesauce
PREPARATION:
Directions for applesauce cake.
Into a mixing bowl, sift together the dry ingredients. Add raisins, chopped walnuts, melted butter, and applesauce. Beat until well blended. Pour batter into greased and floured 9-inch square pan or 11 3/4 x 7 1/2 baking pan.

Bake at 350° for 45 to 50 minutes. Cool and spread with cream cheese or butter frosting. If desired, decorate applesauce cake with grated orange peel and walnut halves.

Spread in a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle with chips, sugar and pecans. Bake at 375 degrees F for 25 minutes or until a toothpick inserted near the center comes out clean.

"CREAM CHEESE ICING"

1 1/2 teaspoons margarine
4 ounces cream cheese
2 cups sifted powdered sugar
1 teaspoon vanilla extract
1/4 cup chopped pecans, toasted

Beat butter and cheese at high speed of a mixer until fluffy. Add sugar;
beat at low speed until well-blended. Add vanilla; beat well
Spread Cream Cheese
Icing over cake; sprinkle with pecans.
