tear up the shell/skin of the potato ..what is the trick?

Use a small melon scoop to remove the potatoe & don't cut too close to the skin.........

When I make them I first bake the potatoes early. Cool them until you can hold in you hand without burning yourself.
Then I shave off the top of the potato (about 1/4"). Then carefully scoop out the meat with a spoon leave a little shell of the meat in the skin it forms a protective area so as not to break the skin.
Next I use a hand mixer to mash the potatoes.
Use Butter, sour cream, shredded cheddar cheese, chopped scallions or onions, and for a really zippy flavor add horseradish to taste.
Now re-stuff the potato, top with more cheese.
Place them on a baking sheet and re-heat for about 10 - 15 min in a 350 degree oven.

i think it is fine to not try to get soclose to the skin, cuz you over-stuff it in the end, so it is not like having it scraped to the bone is going to make a difference. there will still be lots of yummy goodness to stuff it with, and its easier to handle if the shell/skin isn't so thin..... and mmmmmm ... i am starting to want to go make one....
anyway, i bake my potatoes until they are done, and clean out the innards, usually with a knife and spoon, but i like the idea of using a small or medium scooper.....from there i mix sour cream. cheddar, chives, garlic, butter and cream to get some nice mashed potato's going! if i only have one or two of those kickin around then that is what i use--so maybe they will just have sour cream, or maybe sour cream and garlic but i try to add something. then i scoop the potato mixture back into the shell, lay it out on a cookie sheet or pan of sorts, and place a piece of pre-cooked bacon on top of each one and a little more cheddar for garnish and stick it in the oven at 400 or so so get the cheese to melt, and the bacon to become aromatic and greasy looking, and we are good to go!!!! oh my gosh! YUM!

make sure they are totally cooled off, before you attempt to scoop out the insides.
i mix with mine,
sour cream
i add :
real bacon bits
cheddar cheese, shredded
some garlic
chives
after you put them all in the "cup" of the potato, bake again
then , freeze them in baggie type sandwich baggie, the ones that fold into themselves, not the zip type.
they freeze really well, take them out when you want them, and nuke them..
i make a dozen or more at one time..so they are always on hand. my kids love them for lunch even..
