I've had this problem with 4 cars now it a jeep. It starts to smell after the jeep warms up. This leads me to believe it has to do with the cooling system. It is antifreeze type smell that causes
slight sore throat and eyes burning. I had to get rid of other cars because of this. I think it could be a pinhole leaking heater core.

Definitely the heater core. The carpet or the dash may be hiding or absorbing the antifreeze mist / spillage.
Pressure test your cooling system and monitor your antifreeze level. Check the carpet on the passenger side for dampness.

Seems to me that you will have to replace the heater core. I had an old Chevy Malibu years ago and the heater core went bad in it and the smell was the first sign. When it had gotten worse there were vapors coming out of the vents that looked like fog, but of course smelled like antifreeze. It was a huge job to change the heater core, but thank goodness my dad loved me enough to do it for me! It's probably pretty costly to get it done by a mechanic.

does the windows fog up after start up ? if so very likely heater core is leaking. disconnect heater hoses at fire wall run car for awhile see if smell goes away

Someone has spilt something in the cabin sometime in the past...maybe antifreeze. Honestly that is usually the answer to odd smell mysteries in the cabin.

id think its the heater core my self u can put some stop leak in and try that if its a small hole will patch the problem quick if its a small pin hole prolly evaporates be for able to leak

check the heater core , get a pressure test done this will show where if any leaks are present

check floor on pass. side see if wet, other wise have system pressure tested for leaks, antifreeze smells sweat.....
