I like the Sumovore from Solarbotics. It costs around $90, but it's worth it. It involves a lot of soldering, and the electronics are pretty complex. The instructions are clear, though, and make it pretty painless to assemble. Plus, there are a lot of extra features and upgrades you can get for it.
If you're not into that, you should start experimenting with microcontrollers. They're low-cost, and you can do almost anything with them! It can be an intimidating thing to get into, though. I bought the book "123 Microcontroller Projects For the Evil Genius," which was great, and helped a lot. I use the PicKit 1 from Microchip; it's probably the most popular development kit out there, and it's easy to use. The PicKit will cost you about $50 and includes a couple of microcontrollers with it, along with all the software you need to start programming.
