The instructions on a packet of wine yeast states:
"Preparation: For best results, dissolve yeast by adding about 1/4 cup of water at about 35-41C (100-105F)."

I am a 40 year wine maker. I add the yeast to the grape directly after I crush them. At one time I hydrated the yeast by making a mixture of 2 cups water 2 tbls of sugar at 85 degrees , no hotter , then add yeast . I have changed my procedure.
