I see that some "beef" breeders have cross-bred cattle with the American bison, and ended up with a "mixed breed" that is about 87.5% (7/8) of one and 12.5% (1/8) of the other. They claim a superior quality. In light of that, which would you choose? Or, what would it depend on, before you came to a certain conclusion, one way or the other?
(What would factor the heaviest, into your decision? Quality, taste, price, or nutritional value?)

i've tried a buffalo burger once and it was awesome, but if it came down to it BEEF

Well, since I often have my beef in Buffalo (New York, that is)...
Actually, there are various cuts of beef that are just as nutritious as the "cross-bred" critter called "beefalo". I've tasted every cut of beef there is, every cut of buffalo there is, and of course, the hybrid. The hybrid tastes pretty good, I have to admit. But when I go shopping, I buy beef - because it's a heck of a lot cheaper! And I can cook it so that it melts in your mouth and the flavor'll darn near give ya an orgasm! 'Nuff said?

I've had buffalo before. It was surprisingly good, just a little drier than beef. I think I'd choose it if it were free range, organic.

I would choose beef because buffalo is not available. If it were and of comparable price, I would choose buffalo because it's a leaner meat.
