INGREDIENTS:
4 cups sliced potatoes
2 medium carrots, sliced
1 jar (16 ounces) small whole white onions, drained, or about 1 1/2 cups frozen thawed
2 tablespoons butter
2 tablespoons flour
1 1/2 cups beef broth
1/4 teaspoon pepper
1 pound pork sausage
chopped fresh parsley, optional
PREPARATION:
Cook potatoes and carrots in boiling salted water just until tender; drain. Place in a lightly buttered casserole with onions. Melt butter in a saucepan over low heat; stir in flour. Gradually add beef broth, stirring constantly.
Cook and stir until thickened.
Add pepper to sauce; pour over vegetables in casserole. Shape sausage into 8 small patties; sauté slowly until just cooked through. Drain sausage patties and place on top of potatoes in casserole. Cover with lid or foil and bake at 375° for 20 minutes, or until vegetables are tender and casserole is hot. Sprinkle with chopped fresh parsley before serving.

Onion and Sausage Casserole
A flavorful sausage casserole with sweet onions and cheese.
INGREDIENTS:
3 large sweet onions, thinly sliced, about 5 cups sliced
3/4 cup round buttery cracker crumbs
1 pound bulk pork sausage, cooked and drained
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1 (2-ounce) jar diced pimiento, drained
1/4 teaspoon seasoned salt
1/2 cup (2 ounces) shredded Cheddar cheese
PREPARATION:
Arrange onions in a lightly greased 12x8x2-inch baking dish. Sprinkle with cracker crumbs. Combine remaining ingredients except cheese; spoon over onions. Cover and bake at 400° for 30 minutes. Uncover and sprinkle with cheese; bake an additional 5 minutes.
Sausage onion casserole serves 6.

SAUSAGE CASSEROLE
1 lb. mild or hot pork sausage
1 small onion, diced
1 cup Velveeta cheese
1 can cream of mushroom soup
1/2 cup milk
spaghetti
Cook spaghetti until not quite done. Drain.
Fry the onion and sausage together, drain oil. Add Velveeta cheese, cream of mushroom soup and the milk.
Stir all together and pour into casserole dish.Bake at 350F degrees until hot and bubbly.
Delicious!!!

Baked Ziti with Tomato, Mozzarella & Sausage
Serving Size : 4
Try to find freshly made ricotta and mozzarella to see how good this rustic dish can be.
Olive oil
1 large onion, cut in small dice
2 cloves garlic, minced
3/4 lb. sweet Italian pork sausage, removed from its casing and crumbled
Salt and freshly ground black pepper to taste
1/4 cup dry red wine
35-oz. can whole plum tomatoes, chopped, with their juice
1/4 cup chopped fresh marjoram or oregano (from about 6 large sprigs)
1 cup fresh ricotta cheese
1 cup freshly grated mild pecorino cheese
Pinch nutmeg, preferably freshly grated
1/3 cup chopped fresh flat-leaf parsley
1 lb. ziti
1/2 lb. mozzarella, preferably fresh, cut in small cubes
Heat the oven to 425°F. Lightly oil a large, shallow baking dish. Bring a large pot of salted water to a boil.
In a large skillet, heat about 2 Tbs. olive oil over medium heat. Add the onion and sauté until soft, about 5 min. Add the garlic and crumbled sausage and sauté until the sausage starts to brown. Season with salt and pepper. If the sausage gives off a lot of fat, pour off most of it, but leave a little to add flavor to the sauce. Add the red wine and let it boil until it's almost gone. Add the tomatoes with all of their juices and cook, uncovered, at a lively simmer for about 10 min. The sauce will thicken slightly. Add the marjoram or oregano and taste for seasoning.
In a large mixing bowl, mix together the ricotta, about half of the grated pecorino, the nutmeg, and the parsley. Season with salt and pepper.
Meanwhile, cook the ziti until al dente. Drain well and toss it with the ricotta mixture until well coated. Add the sausage and sauce and mix again. Add the mozzarella and toss gently. Pour everything into the baking dish and sprinkle the remaining pecorino on top. Bake uncovered until lightly browned and bubbling, about 20 min. Serve right away.

Cabbage Casserole
15 servings 1½ hours 30 min prep
1 1/2 lbs ground pork or beef
1 medium onion, chopped
1 dash garlic powder
1 dash oregano
32 ounces spaghetti sauce
1/4 cup rice
1 dash basil
1 head cabbage
1 lb mozzarella cheese, shredded
Shred, boil 3 minutes and drain cabbage.
Brown onion and meat and Drain.
Place cabbage in casserole dish.
Place meat mixture on cabbage.
Add garlic powder, oregano and basil on meat.
Add spag.sauce and rice.
Layer like you do lasagne.
Top with cheese.
Cover and bake 1 hour at 350F degrees

6 slices bread
2 lbs bulk sausage
1 (8 ounce) can mushrooms, drained
16 ounces grated sharp cheddar cheese
6 eggs
2 cups light cream or milk
1. Tear bread into small pieces and put into lightly greased 9 x 13 casserole dish.
2. Cook and crumble sausage.
3. Drain sausage and place over bread.
4. Layer mushrooms and then grated cheese evenly over sausage.
5. Beat eggs,add light cream and mix well.
6. Pour egg mixture over casserole.
7. Bake uncovered at 350* for 30 to 45 minutes.
