BASIC CAKE RECIPE
1/2 c. butter
1 c. sugar
1 tsp. vanilla
2 eggs
1 1/4 c. flour
1 tsp. baking powder
Mix butter and sugar. Add vanilla and eggs; mix well. Add flour and baking powder; mix well. Bake in 350 degree oven approximately 25 minutes (8x8 pan).
That's the recipe for a basic sponge and this is alink to lotsof different frostings and fillings, so you can select what will be appreciated most by your family and make accordingly.

Chocolate Zucchini Cake
12 tablespoons (1 1/2 sticks, or 3/4 cup) butter
2 cups sugar [note: I usually reduce this to about 1 1/2 cups]
3 eggs
2 teaspoons vanilla extract
1 tablespoon grated orange zest
2 cups grated raw zucchini
2 3/4 cups all-purpose flour
1/2 cup unsweetened cocoa
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup milk
1 cup chopped walnuts [I omit these, being allergic to most nuts, and
it still tastes great]
Preheat oven to 350 F. Grease and flour two 9 inch round pans or a 10 inch
tube (or bundt) pan.
Cream the butter and slowly add the sugar, beating until smooth. Beat in the
eggs and mix thoroughly. Add vanilla, orange zest and zucchini and blend well.
The batter make look curdled at this point, but it will become smooth later.
Sift together the remaining dry ingredients and add to the zucchini mixture
along with the milk. Beat thoroughly, then stir in the walnuts.
Pour into pan(s) and bake layer cakes for 35-40 minutes, the tube cake for
an hour, or until a knife inserted into the centre comes out clean. Remove
from oven, let cool, and either sprinkle with confectioners sugar (that is
all we do, since it is very moist as it) or frost with Coffee Frosting (I
haven't tried this, but the recipe is as follows, from the same cookbook).
Coffee Frosting
3/4 cup sugar
1/2 teaspoon cream of tartar
pinch of salt
2 egg whites
1/4 cup cold water
1/2 teaspoon powdered instant coffee
2 teaspoons vanilla extract
Combine the first five ingredients in the top of a double boiler. Set over
simmering water on low heat. Beat for 5-7 minutes, or til frosting stands
in peaks. Remove from hot water, add the instant coffee, and continue beating
until it forms soft, billowy peaks. Beat in the vanilla. There will be enough
to frost an 8 or 9 inch two layer cake or a 9-10 inch tube cake.

SIMPLE SPONGE
6oz SR flour
6oz Margerine
6oz sugar
3 eggs
cream the Margerine and sugar together until the butter is pale and fluffy
add the flour and eggs and beat until it forms a cake mix
( to make it a chocolate cake add 2 tbsp of cocoa mixed with water into a paste and add at this point)
pour into a tin and bake for approx 45 minutes at gas mark 4

Chocolate cake
Ingredients:
3 cups flour, sifted
2 cups granulated sugar
6 tablespoons baking cocoa
2 teaspoons baking soda
2 teaspoon salt
2 teaspoon vanilla extract
2 tablespoons white vinegar
1/2 cup +2 Tablespoons melted butter
2 cups cold water
Directions:
PREHEAT oven to 350° F.
COMBINE flour, sugar, cocoa, baking soda and salt in a large bowl. Make 3 holes in mixture. Into the first hole, pour the vanilla extract, into the second hole, the vinegar and into the third hole, the melted butter. Pour cold water over all. Mix with fork or wire whisk until well blended; do not overbeat. Mixture may contain some small lumps. Pour batter into ungreased 9X13 baking pan.
BAKE for 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.

This is one of my absolute favorite cakes in the entire world. My neighbors do it for every birthday party, and once I tried it, I was hooked.
I recommend decorating the top with fruit (pie fillings work just fine) along with the 'frosting'.
Tres Leches (three milks)
INGREDIENTS
3/4 cup butter, softened
1 1/2 cups white sugar
9 egg yolks
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 cup milk
9 egg whites
1 teaspoon cream of tartar
2 cups heavy whipping cream
1 (5 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
2 cups heavy whipping cream
1 cup white sugar
DIRECTIONS
*Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
*In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg yolks one at a time, beating well with each addition, then stir in the vanilla. Sift together the flour and baking powder. Add the flour mixture alternately with the milk; beat well after each addition. In a large glass or metal mixing bowl, beat egg whites and cream of tartar until whites form stiff peaks. Gently fold the egg whites into the cake batter using a rubber spatula. Spread the mixture evenly into the prepared pan.
*Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool.
*In a small bowl, stir together the 2 cups heavy cream, evaporated milk and sweetened condensed milk. Pour the mixture over the cake until it wont absorb any more. You may have 1/3 to 1/4 left over. That's okay.
*Combine the whipped cream and sugar, spread over soaked cake. Refrigerate cake until serving, Pour leftover milk mixture onto plates and swirl in jam if desired, before setting cake on the plates.

Lemon Cake
Cake:
1 C. butter (no substitutes), at room temperature
2 C. granulated sugar
3 C. sifted cake flour
1 T. baking powder
1/2 t. salt
3/4 C. milk, at room temperature
Whites from 6 eggs
Lemon Curd:
Yolks from 6 eggs
1 C. granulated sugar
1/2 C. butter (no substitutes)
Peel (yellow part only) and juice of 2 lemons
Preheat oven to 350°F. Line three 9-inch pans with parchment paper or wax paper; grease and flour bottom and sides, tapping out excess flour.
To make the cake:
In a large bowl, beat together butter and sugar. Sift together cake flour, baking powder and salt. Add to creamed mixture alternately with milk, beginning and ending with flour.
In a large bowl, beat 6 egg whites until stiff. Fold about one-third into butter/flour mixture to break it down a bit. Gently fold in rest of beaten egg whites just until whites disappear.
Divide evenly and gently among the 3 pans.
Bake 23 to 30 minutes, just until the cake begins to pull away from the sides. Cool 10 minutes in pans. Turn out on wire cake racks.
To make the Lemon Curd:
In the top of a double boiler over simmering water, mix the egg yolks, sugar, butter and lemon peel and juice. Stir constantly until thick, about 15 minutes.
While curd is still warm (so it doesn't get too thick), spread between the bottom and middle cake layers, then between middle and upper layer. The cake may be slightly warm. Pour remaining over top so it drizzles part way down sides of cake.

Chocolate Chiffon Cake
INGREDIENTS
1/2 cup baking cocoa
3/4 cup boiling water
1 3/4 cups cake flour
1 3/4 cups sugar
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup vegetable oil
7 eggs, separated
2 teaspoons vanilla extract
1/4 teaspoon cream of tartar
ICING:
1/3 cup butter or margarine
2 cups confectioners' sugar
2 (1 ounce) squares unsweetened chocolate, melted and cooled
1 1/2 teaspoons vanilla extract
3 tablespoons hot water
1 tablespoon Chopped nuts
DIRECTIONS
1.)In a bowl, combine cocoa and water until smooth; cool for 20 minutes. In a mixing bowl, combine flour, sugar, baking soda and salt. Add oil, egg yolks, vanilla and cocoa mixture; beat until smooth. In another mixing bowl, beat egg whites and cream of tartar until stiff peaks form; gradually fold into egg yolk mixture. Pour into an ungreased 10-in. tube pan. Bake on lowest rack at 325 degrees F for 60-65 minutes or until cake springs back when touched. Invert pan to cool; remove cake from pan.
2.)For icing, melt butter in medium saucepan. Remove from heat; stir in sugar, chocolate and vanilla. Stir in enough water until desired consistency; drizzle over cake. Sprinkle with nuts.

on the steam melt the butter and pore the sugar and eggs,Honey and a tea spoon of bread soda.all the time mix.slowly pore glass by glass of flower.then you have to make them in the shape you have the backing form.and you have to bake them separately,it's gonna be around 8 separate circles.
cream:
put the gelatin in the cold water and leave for 10 min .in the mean time mix the sour cream with sugar and lemon juice. than put the gelatin and mix everything together.leave for 30min all This mass in the fridge. after put them on the circles you made before and for 24hour es place in the fridge.you can decorate with a nuts. trust me that's gona be the best cake you ever made.just try it.
