Lemon Drop Cookies
1 C. butter -- softened
1/2 C. sugar, confectioner's
1 egg yolk
2 T. lemon juice
1 lemon zest -- grated
2 1/4 C. flour
sugar
Glaze
1/4 C. sugar, confectioner's
1 T. lemon juice
1 drop red food coloring -- whisk together till
Preheat oven to 350F. Line cookies sheets with parchment paper.
In a large bowl cream the butter and confectioners sugar with an electric mixer, add the egg yolk, lemon juice, and zest and beat until smooth. Add the flour and beat until well combined.
Form the dough into 1 inch balls and place them about 2 inches apart on the prepared sheets. Flatten each ball with the bottom of a glass dipped into granulated sugar to keep it from sticking to the dough. Bake the cookies in the middle of the oven for about 13 minutes, or until barely golden.
Transfer to wire racks. As soon as they are cool enough to handle, dip the top of each cookie in lemon glaze and allow to cool completely. store in airtight containers for up to 1 week or in the freezer for up to 2 months.

Ingredients:
1 (3 oz.) pkg. lemon flavored jello
1 c. boiling water
1 (18 1/2 oz.) box lemon cake mix
3 eggs
3/4 c. vegetable oil
1 tbsp. lemon juice
Icing:
1 c. 3x powdered sugar
1 1/2 tbsp. lemon juice
lemon zest (optional)
Dissolve jello in water. Cool. Then combine cake mix, eggs, vegetable oil, lemon juice and gelatin. Beat until smooth. Pour into greased 9x13x2 inch baking pan. Bake at 350 degrees for 30 to 35 minutes.
Combine icing ingredients. Pour over cake. Then return cake to oven for 2 additional minutes. This is a very good cake and easy to make.

Robin's Lemon Pudding Cookies
INGREDIENTS
1 cup buttermilk baking mix
1 (3 ounce) package instant lemon
pudding mix
1 egg
1/4 cup vegetable oil
1/3 cup granulated sugar for
decoration

Grease 2 large cookie sheets.
2. Mix baking mix, pudding, egg and oil in a
large bowl until dough forms.
3. Roll dough into 1 inch balls. Place balls 2
inches apart on the cookie sheets. Dip flat
bottom glass or cookie press into sugar.
Press onto dough ball and flatten into 1/4
inch thick cookie. Bake until just golden
brown on the edges, about 10 minutes.
Transfer to racks and cool completely.

Easy Lemon Cake Cookies with Icing
INGREDIENTS
1 (18.25 ounce) package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 cup confectioners' sugar
1/4 teaspoon lemon extract
1 tablespoon milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with foil.
Mix together cake mix, eggs, and vegetable oil. Drop by rounded teaspoons onto baking sheets and bake for no more than 8 minutes. Do not overbake! Once all the cookies are done. Remove the foil. You have a no need to clean baking sheet.
To Make Lemon Icing: Mix together confectioners' sugar, lemon extract, and milk. Mix ingredients together (more or less to your desired liking). When the cookies are warm or completely cooled, place as much icing on them as you like
Lemon Bars
Bottom Layer:
2 cups flour
1/2 cup powdered sugar
1/2 cup plus 1 Tablespoon melted butter
Top Layer:
4 eggs, beaten well
2 cups sugar
4 Tablespoons flour
1 teaspoon baking powder
2/3 cup lemon juice
Grated rind of two lemons
1/4 cup powdered sugar
Preheat oven to 350 degrees Fahrenheit.
Bottom Layer: Mix ingredients together and press batter down with hands to cover bottom of 9 x 13-inch pan. Bake 15 minutes; cool slightly.
Top Layer: With rotary mixer, combine all the ingredients well, except for the powdered sugar, and pour the mixture over the bottom crust.
Bake 20 to 25 minutes. Cool. Sprinkle with powdered sugar and cut into squares.

Sifted powdered sugar
Mix cake mix, egg and Cool Whip. The batter will be very stiff. Roll into little balls the size of a walnut or slightly smaller. Roll balls in powdered sugar. Bake at 325 degrees for 8 to 10 minutes. Check bottom of cookie to see if it is brown. Don't let top of cookie brown. These are chewy. Makes about 3 dozen.

Ingredients
2 baked (9-inch) round white cake layers, cooled
2 cups boiling water
1 pkg. (8-serving size) Jello Brand Lemon Flavor Gelatin
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
Preparation
PLACE cake layers, top sides up, in 2 clean 9-inch round cake pans. Pierce cake with large fork at 1/2- inch intervals.
STIR boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved. Carefully pour 1 cup of the gelatin over 1 cake layer. Pour remaining gelatin over second cake layer. Refrigerate 3 hours.
DIP 1 cake pan in warm water 10 seconds; unmold onto serving plate. Spread with about 1 cup of the whipped topping. Unmold second cake layer; carefully place on first cake layer. Frost top and side of cake with remaining whipped topping.
REFRIGERATE at least 1 hour or until ready to serve. Decorate as desired. Store leftover cake in refrigerator.
