Probably because the meat or the part of the beef used in porterhouse steak is very tender and there is very limited portion of the said meat in the whole beef, that is why it is expensive.

The cut of beef has a little more waste than other cuts off of the carcass. Also, the bits of meat in the tenderloin part of the porterhouse (top left side) are part of the tenderloin, which is the most expensive part of the bovine altogether. Personally, I love porterhouse, but they are usually too large a portion for a woman to eat!!

Law of supply and demand, more T-bone steak available than Porterhouse, so T bone is less expensive, hamburger is made with scraps so it is less expensive and are more available.

IF for some reason people got the idea that Porterhouse steaks were poison.....the price would drop.

have you had a porterhouse? obviously one person on the answer list hasn't. "it's the most tender cut" goofball. go to a butcher shop and look and compare. a porterhouse is about the equivalent of three steaks in one. you get the fillet which is tender and flavorful, and it is accompanied by a t-bone which is a good complimentary steak to add a little different texture and flavor for someone who has an appetite too big for a small fillet. so there ya go.

It's a T-Bone with a filet on the other side, that's why it's so expensive.
