Clear Fish Soup

1/2 lb White fish fillets, fresh
Or frozen
4 cup Superior chicken broth
(clear)
1 tbl Medium sherry
8 slc winter bamboo shoots
1 bn fresh spinach
1 tsp Salt
1 tbl Cooked peanut oil

Preparation: Heat chicken broth. Cut fish fillets into 1" by 2" pieces.
Cut off root ends of spinach & thoroughly wash. Slice bamboo shoots into paper-thin strips; add to stock as it is heating.
Using wire strainer, blanch fish pieces in boiling water for 15 seconds, reserve. Add salt to water. Blanch spinach for 10 seconds, drain & reserve.
When stock reaches rapid simmer (don't let it boil), add fish, spinach & sherry. Cook for 3 minutes. Heat peanut oil in ladle over flame. Mix oil into soup, transfer to serving bowl, & serve.

Sinigang Na Isda

1 lb tomatoes
1 cup thinly-sliced onions
2 cup water
3 cup bottled clam juice
1/4 tsp dried ground chili peppers
1 1/2 lb fillet of mackerel
1 cup watercress or spinach shredded

Combine the tomatoes, onions, water, clam juice, and chili peppers in a saucepan; bring to a boil and cook over low heat for ten minutes.
Cut the fish into bite-sized pieces and add to soup; cook over low heat for ten minutes. Add the cress and cook one minute. Serve immediately.
If you wish to cook the soup ahead of time, still add the watercress or spinach leaves only 1 minute before serving to avoid overcooking.
