Mayonnaise Cake

"Mayonnaise makes this cake nice and moist."
Original recipe yield: 2 -8 or 9 inch layers.

INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

I have a chocolate cake recipe that is so easy my 10yr old makes it for me and it has NO EGGS in it.
Sift 3 cups Self Raising flour, 3 tablespoons cocoa, 1and a half cups sugar into a large bowl. Boil 2 and a half cups of water and then add 4 tablespoons golden syrup, 180grams butter, 1 teaspoon vanilla essence and 1 teaspoon bicarbonate soda. Pour mixture over dry ingredients and mix with a fork until there are no lumps. Pour the mixture into a large greased and lined baking tin and bake in a moderate oven, 180oC for 35 minutes. Leave the cake in the tin and cut when cake has cooled.

Ingredients:

3 cups flour, sifted
2 cups granulated sugar
6 tablespoons baking cocoa
2 teaspoons baking soda
2 teaspoon salt
2 teaspoon vanilla extract
2 tablespoons white vinegar
1/2 cup +2 Tablespoons melted butter
2 cups cold water

Directions:
PREHEAT oven to 350° F.

COMBINE flour, sugar, cocoa, baking soda and salt in a large bowl. Make 3 holes in mixture. Into the first hole, pour the vanilla extract, into the second hole, the vinegar and into the third hole, the melted butter. Pour cold water over all. Mix with fork or wire whisk until well blended; do not overbeat. Mixture may contain some small lumps. Pour batter into ungreased 9X13 baking pan.

BAKE for 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.

Eggs, as you may know, act as a binder. So if you are absolutely in an area where their are NO eggs, or egg substitutes, you may end up with your own creation of 'cake pudding.' But as binders are stickey, you could try cheese. No, really. Cheese. A very softly flavored cheese, like fresh mozzerella or brie (without any herbs or flavorings). Please keep in mind that the shape of your cake may not come out quite like the pan--no matter how long you cool before removing it. So you may have to get creative. (One time my husband got a "volcano cake"--I just put the icing in the middle and around the chocolate mountain).

ORIGINAL CHOCOLATE MAYONNAISE CAKE

1 c. boiling water
1 c. coarsely chopped dates
1 c. coarsely chopped walnuts
1 c. sugar
1 c. mayonnaise
6 tbsp. grated unsweetened chocolate
1 tsp. vanilla
2 c. unsifted cake flour

Grease and flour a 9 x 9 x 2 inch baking pan. In a small bowl stir baking soda and boiling water until dissolved. Stir in dates and nuts.
In large bowl with mixer at low speed beat sugar and real mayonnaise until well blended. Add chocolate and vanilla. Beat until blended. Add date mixture. Beat until well mixed. Gradually beat in flour until smooth. Turn into prepared pan. Bake at 350 degrees for 45-50 minutes or until cake tester inserted in center comes out clean. Cool in pan. Frost if desired. Makes 9 servings.
