this is not crystallization of glucose but formation of callose that may happen upon stressful conditions like any tissue damage just as you say. it also takes place in autumn when the sap travelled down into the roots.

this is not crystalization but polymeration!!. callose is a polymer, just like starch - it doesnt taste sweet if you tasted it although it is composed of sugar molecules.

the actual temperature has nothing much to do with it directly because it it is not like that a solution crystalizes when you cool it..
