With a small sharp knife, cut along the back just a bit off of the vein so you don't nick it. Rinse under cold water while removing the vein. It is poo, but harmless if you don't want to remove it. From there you can butterfly them if you want by cutting down a little deeper.

With a shrimp de- veiner or a pecan pick...finger nails work too. Which ever is available and by the way it is not a vein it is the poop shoot!!

you pull the head and tail off ,then you grab the little tube near the butt and gently put it out,NO need to cut all down the back either risking cutting the intestinal tract,( where the poo is)it works ALL the time for me.
