Just bought a bushel -- freshly charred, stems, seeds and all.

Just wrap them up in plastic wrap or put them in a plastic bag for about 15 minutes so they steam. Then put on a pair of latex gloves and rub the skin off. It comes off very easily.

Your going to think I'm crazy but an open flame is the best way to roast green chiles. If you have a gas cooking range hold the chilies in the flame with a pair of tongs turning them constantly until they just start to char and the skin begins to split. A bar-b-que grill works eqaully well follow the same instructions. You can also use a indoor grill like the George Forman grill but it takes a bit longer. Whatever method dont add any oil, grill them dry for the best taste.

After roasting them in your broiler or over an open fire, allow them to sweat for 10 minutes in a paper bag, plastic if you don't have paper. The skin will peel right off. Alternatively, you can wash the skin off under cold water.

yes, I learned this one myself the other day., After roasting them you immediately put them in a plastic bag for at least 30 minutes and you will see when you take them out you can peal the skins right off in just a couple large pieces very simple but works.

To remove the skins, and to get a little hot out of them, you can clean them in a large bowl of water with some white vinegar, then run them under clean water.
