I like to cook a nice roast beef on Sundays, eye of the round is a nice cut. Roasted potatoes with carrots, garlic, and onion in the same pan as the beef makes for some great flavor.

How about some chicken and dumplings. I always take the easy way out and buy boneless skinless breasts--brown them with salt and pepper and a little garlic salt then put in casserole pan with cream of chicken soup over the top (I do not dilute the soup) then when it get close to being done (within ten minutes) I mix up some Bisquick and drop biscuits on the top of it cover it then after 10 minutes take the cover off and let them brown. Serve with a nice green vegetable and salad. For desert, how about some orange sherbet or some raspberry sherbet?

Chicken!!!!!!! Take a few boneless chicken breast and put them in some tin foil mince some shallots, garlic, put it on the chicken, quarter cup of balsamic vinegar, some olive oil, chop up some rosemary sprinkle it on the chicken wrap it all in the tin foil toss it in the oven for about 45 minutes but it's better on the grill. The amount of shallots and garlic depends on your taste. This goes well with glazed carrots, and roast some baby red potatoes too. I do it all on the grill and wrap it all in tin foil. The tin foil is an easy way to make sure that all is cooked well, and helps to retain all the flavor.

Today I am making 15 Bean Soup
You can buy the dry beans (called 15 bean soup) at your local grocery and it gives you the recipe on the bag. You will need the bag of beans ( 15 different types of beans), onions, ham cut up in pieces or bite sized chunks, and ham hock. Of course you can personalize and add other things if desired. The bean package also includes a seasoning package that you can add at the end.Then end result is that the soup is really succulent.

A roast chicken is always nice. You can also have some roasted garlic parmesan mashed potatoes, roasted carrots and onions, peas with butter sauce, rolls, and a store bought pie or some assorted sorbets for dessert.

Chicken Glorious
Ingredients
2 large onions, sauteed
12-ounce package. fresh mushrooms
1 whole frying chicken skinned and cut in pieces
2 teaspoons oregano or Italian seasoning
2 teaspoon garlic powder
1-1/2 cup low-fat mozzarella cheese.
Place skinned chicken in baking dish, add 1/3 cup water. Sprinkle chicken with oregano and garlic powder. Bake at 325 degrees for 25 minutes. Turn chicken and repeat process.
Saute onion until soft and transparent. Add washed and sliced mushrooms. Remove chicken from oven, spoon mushroom mixture evenly. Sprinkle with 1-1/2 cups of low fat mozzarella cheese.
Return to oven until cheese is melted.

Cold Pasta Salad
Ingredients
One 16-ounce package small shell pasta -- cooked, rinsed, and drained
8 ounces Wishbone Italian dressing
1/2 bottle McCormick Salad Supreme
2 medium cucumbers, shopped
3 medium tomatoes, chopped
2 small (1 large) red onion, chopped
2 medium green peppers, chopped
1/2 small can ripe olives
Combine all ingredients and marinate overnight.

Fruit Crisp
Ingredients:
8 cups fruit (I've used peaches, apples, plums, blueberries, or combinations)
1-1/2 cups sugar, divided
1-1/2 cups flour
1 teaspoon cinnamon
1 cup butter
Toss fruit with 2/3 cup of sugar and cinnamon; spoon into lightly greased 9 x 13-inch baking dish. Set aside. Combine flour and remaining sugar; cut in butter until mixture is crumbly. Sprinkle on top of fruit. Bake at 375 degrees for 35 to 40 minutes.

If you wanted a southern dinner, I would suggest pot roast, macaroni and cheese, greens or beans, sweet potatoes, and cornbread. or something simple like baked spaghetti with ground beef mixed in and topped with cheese.
