Well slow cook can mean a lot of things. It depends on how much meat loaf (how much does it weigh) and how long you want to cook it. I cook a two to three pound meatloaf at 350 degrees for about an hour and 15 mins. I never really slow cooked a meat loaf but i have slow cooked several roasts just lower your oven temp--for ever 25 degrees lower you can add about 30 mins to the cook time but be sure not to go below 175 degrees because you may just have a dried out slab of meat and you must get the internal temp high enough to insure that you dont end up with a bacterial sicience expierament. If you use eggs you must cook thourghly, dont want tomake yourself sick

OK a couple of things;
No you cannot partially cook a meatloaf and then refrigerate bc doing so creates an environment with a high potential for food borne illness.
If after a day of being refrigerated your meatloaf dries out the recipe is at fault.
Usually the fault is too much meat and not enough filler.
Change to recipe to one that just holds together when sliced.
To test
Bring a small qty of water to a simmer
Take a tsp of the mixture
Using another tsp w/ the open side down compact the mixture
Slide into the water
allow to cook
when done check for flavor and texture adjust as needed

Meatloaf cooks in an oven for about an hour to an hour and a half depending on how large you make it. If you are using a glass loaf pan cook it on 325 if you are using a metal pan cook it on 350. You can't really cook a meatloaf slow because it will dry out and burn.

I made Paula Dean's Oven-Fried Potato Wedges to go with the meatloaf we ate the other night. The wedges are a bit of work since dipping and dredging can be laborious, not hard just time consuming, but relaxing in a sense too. I have to say it was worth it. The crust was crunchy, messy, and finger licking delicious. These would go great with ranch dressing dip. I followed her recipe pretty well except I added 1 tsp. Worcestershire sauce to the mayo for more flavor. I did not make her "House Seasoning" either, I just threw in some garlic powder, salt and pepper. You may also want to run the cornbread stuffing through the food processor for a finer crumb or beat them up with a pestle like me. If you do not have "Cornbread Stuffing Mix" in your country you may use seasoned bread crumbs instead. Serves 6.
