I've seen some recipes that just say "cream" without specifying anything and they've left me confused as to which one I'm supposed to be use.

if it's a dessert it usually means whipped cream and if a casserole or an entree usually sour cream

Um...I would think It would depend on the recipe.

Usually if it is a dessert, it could be cream cheese, whipping cream, heavy cream or sour cream.

The recipe should specify what type of cream is needed.

The recipe would be referring to the sweet kind. Actually I quite often substitute sweet cream with a light sour cream - Apple Pie with sour cream - try it some time.

Cream:

Half-and-half is half cream and half milk. it is used in coffee. It can be substituted for light cream in recipes.

Light cream is coffee cream and is used where richness is desirable but whipping is not necessary.

Whipping cream contains enough butter fat to thicken and hold its shape when beaten. It should be very cold at time of beating, and also good idea to chill the bowl and beaters too.

Sour Cream is cultured light cream. Smooth thick texture used in many dishes.

Terms in recipes "CREAM"To beat with spoon or mixer till mixture is soft and fluffy.

If it states cream, they mean sweet cream, most recipes specify if sour cream is needed.

Usually when it just says cream, they mean the heavy whipping cream in the carton. Unless you are making a Mediterranean dish, them the cream is more like a butter consistency.

Unless it specifies "sour cream" don't put it in a recipe.

I believe it is whipping cream, or like a milk. If it asks for sour cream, thab use it. but when it says cream, use milk, or half and half
