Banana Nut Bread

1 3/4 cups all-purpose flour
1 1/4 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
2/3 cup granulated sugar
1/3 cup vegetable shortening
2 eggs
2 Tbls. milk
1 cup mashed ripe bananas (about 3 med. bananas)
1/4 cup chopped walnuts
1 - 2 Tbls. butter OR margarine

-Combine flour, baking powder, salt, and baking soda; set aside.
-Beat together sugar and shortening with an electric mixer on medium speed for 5 minutes, scraping sides of bowl often.
-Add eggs and milk, one egg/Tablespoon at a time, while beating. Beat at medium speed for 1 minute.
-Alternate adding flour mixture and banana while beating at low speed until all is combined.
-Fold in nuts by hand.
-Pour into greased loaf pan and bake in a 350 degree oven for 60 - 65 minutes.
-Rub butter over the top of the hot loaf.

Notes: If making in (4) mini loaf pans, reduce baking time to 30-35 minutes.

Here's the recipe that I use the most:

"Very Moist Banana Nut Bread"

2 cups sugar
1/2 teaspoon salt
2 1/4 cups flour
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla
1 1/3 teaspoons baking soda
1/4 cup buttermilk
1 cup chopped pecans
4-5 bananas (use completely black bananas, this is very important)

Heat oven to 350°. Grease or spray 2 loaf pans.
In a large bowl, mash bananas with a masher or by well washed hands.
Dissolve soda in buttermilk-- use a larger container as it will foam up quite a bit.
Mix all ingredients by hand and add in 1 cup chopped nuts. Bake at 350° for 1 hour, or until toothpick comes out ALMOST clean.
Totally clean will mean a dryer loaf.
Let cool 15 minutes after removing from oven and remove from pans.
Or, let cool, cover with foil, slide into freezer bags and freeze.
Great when using tin foil pans.

"Sweet Coconut Glaze"

2 c. sugar
1/2 c. water

Boil for 1 minute and add 1 teaspoon coconut extract. Pour over cake while still warm.

1/2 cup butter(room temp)
1 cup sugar
2 eggs
2 cup flour
1 cup banana mashed
2 tsp baking soda
3 tbsp buttermilk
1/2 tsp salt
1 cup nuts(walnuts are my fav)

Mix together and place in two greased bread pans
Bake at 350 for 1 hr

Let cool
Slice and toast
Spead butter and honey while warm.
Eat with a glass of milk.
