Is it just so you don't burn your mouth and tongue, or is there more of a reason why you should wait?

Besides the fact that you can burn yourself from the heat, I heard that liquids can erupt after heating in the microwave. You should stir it before during and after the heating. Air bubbles get trapped under the surface. My friend heated some wax and it erupted after she took it out of the microwave and she burned herself badly. It's probably safe to leave it in the microwave for 1 minute.

The microwave doesn't give the meal an homogeneous temperature: Some parts may burn your mouth while others are still cold. If you wait a little, the temperature will be almost the same in the whole meal.

Microwaved food tends to develop spots that are hotter than others. That wait, along with a stir, helps the heat to disperse evenly throughout your food. Sauces need to thicked, microwaved meat can reabsorb juices that have cooked out of it. And, there's that whole "burning your face and fingers with steam" that you get to avoid by waiting a couple of extra minutes. Patience is a virtue, even if it only took a few minutes to microwave your food.

the food is still cooking for a minute or more (depending on sugar/water content) after the microwave stops.
Most microwave recipes allow time for the food to complete its cooking cycle before it's considered done - meaning it will say 3-4 minutes, but in reality, it'll be done in 5.

I don't wait a whole minute, but I got burned once by steam from a hotdog I had just taken out.

Microwaves can cause 'super-heating' of food & liquid. That is why you need to stir the food or drink as well as wait.
