Usually you see the priest pour the water unto the crown of the baby's head (with the baby being held parallel to the ground to keep the water out of the baby's face). The sprinkling is what the priest does to the congregation after the Baptism. Catholics don't really do the full immersion; that's more of a Protestant practice.

Sprinkling never. Immersion sometimes. In infant baptism the water is poured over the forehead of the child three times, not sprinkled. Adults may be baptized by pouring or immersion, though not all Catholic churches are set up for immersion baptism.

Pouring was the usual means of baptism in the early Church. Note that every known work of early art picturing the baptism of Jesus shows Him standing next to John while John pours the water on His head. This only makes sense given that the early Church existed largely in a desert land, where in many towns the only water available for many miles was the town well.

The Catechism of the Catholic Church states:

Baptism is performed in the most expressive way by triple immersion in the baptismal water.

However, from ancient times it has also been able to be conferred by pouring the water three times over the candidate's head (pouring not sprinkling).

Most churches give the parents a choice now. I had a baby cousin who had an immersion baptism, and it really upset her. In my opinion, sprinkling is better for infants, and immersion may be more meaningful to older people receiving the sacrament.

I am a former Catholic and its done as sprinkling. However I was baptized the right way by full immersion 2 yrs ago. Baptism does not save but it shows that you are giving up your old selfish self and giving yourself to Christ.

Both currently. In our past we have completed Baptism in full immersion, sprinkling, now in both forms. Many many churches today have full immersion Baptismal tanks.

Most normally sprinkle but you can ask for immersion.
