I'm a UU. We get a lot of cross-over from Unity; our members leave us to go there and vice versa. The UCC or the Quakers are good choices too. Both are mildly less liberal than Unity but still plenty liberal compared to the Bible thumpers who dismiss the theory of evolution and only recently, grudgingly, admitted that there might be something to the theory of planetary motion.

I'm a Unitarian Universalist (sixth generation Universalist). Depending on where you live you might find a UU Congregation with more of the flavor you're looking for. If you're still in need, try a UCC church (United Church of Christ), formerly called the Congregationalists. Their polity is similar to ours, they're congregationally driven. They are among the more liberal Christian Churches, in fact several are dual membership UCC and UUA.

Try the Episcopal Church or Unity (it's different from the Unitarian Universalist church). For more information on Unity, do a search on the Unity School of Christianity.

You might want to check out Zen Buddhism. In a country which is predominantly Buddhist, I would expect to find some Buddhists who are kind of like our religious right, but those in the United States tend to be politically liberal. Although the Bible isn't specifically a Buddhist work, it is not unusual for Buddhists to use the Bible to make a point.

I'd second the vote for Episcopalians and add one in for Methodists and Quakers.
Or heck, look for a different UU. Our local UU is...nice. I like it fine. They have nice stuff. It's kind of blah, but it's nice. No real complaints. I prefer it when I can occasionally drive an hour out of my way to attend a different one with a crazy pagan-y minister who considers dancing around a bonfire or a Maypole far more worthwhile than anything she's going to say on Sunday morning. No two UU's are the same.

why join something that doesnt take the bible literally but uses the bible? makes no sense. Take your own path in life, choose your own faith. You're the only one who can give yourself meaningful spirituality
