I'm not sure what kinda takedown this is I think it might me judo. I was clinching I had one underhook and my opponents wrist out to the side. I created some space and pulled his arm straight, then I straightened his arm, and tripped his leg while using his straight arm to push his upper body back. It worked like a charm and I got side mount.

What is this called? How can I refine this technique. If he were to counter with a hook or uppercut, what could I do to avoid that and still get him down?

i have been doing judo for 2 yrs now and yes i think it is from judo it depends how you tripped him. If you tripped him on the outside on the right leg it is O SOTA GARI(major outter reap) if it was on the inside it was KO UCI GARI(Minor inner reap) if it was on the inside left left in was O UCI GARI(Major inner reap)but if it was on the out side left it was KO SOTA GARI(Minor Outer reap)

I've seen it and used it in my Hapkido class, but I'd have to get more information from my instructor as I'm not sure if there is a specific name for that technique.

but my main concern would've been if he was able to trap the arm(s) I was using in the side mount attack for his counter, or if he was able to try for a leg to body take down for an armbar position, because I have seen this happen before.

If I find out, I'll let you know if you haven't found out, or found a suitable answer.
