It takes a special kind of stupid to eat horse here in America when so many other options are available. But if you are going to eat Mr. Ed treat it like you would any other meat that has to be more tender, either marinate it for an extended period of time I would use Italian salad dressing, or stew it. When you are done with the horse you can go on to eating cats and dogs and then eventaully members of your own Family.

Try a marinade...or even a brine works well with meat that's tough. Also, try using citrus to break down the toughness a little...but make sure it's not too acidic because you'll end up cooking the meat and it'll be more tough than it was in the first place.
Also, if you have the time, stewing the meat with some vegetables is the best way....(easy if you have a crock pot, but if you don't then simmering for a few hours will do.)

you can buy or make an in expensive jaccard.....it is nothing more than spikes that tenderize meat....or you can get a hammer type which is 4 sided and it pounds out the meat even to a swiis style....

i don't know about horse but coke works well on deer and tough beef...also beer..but Adolf's meat tenderizer is not salty...it is made from papaya.

You eat HORSE. That's horrible!!! Grow a vegetable garden. Things can't be that bad that you would want to eat your pet.
