1lb is 3500 cal. If you eat more cals than you burn each day, you will gain weight. The body can process all types of nutrition (carbs, protein, fats) and turn it into fat. Evolutionarily, it's an advantage to store the extra fat (and your body has no limit mechanism) as energy for a later time.

by consuming more than you burn. Fat is stored calories that have not been burned off.
In my personal case with a limited, spaced consumption of fast food, and a physical job, i was able to maintain a constant weight, but by taking the physical job away i gained over 20# in 6 weeks

It is when we eat more calories than we use up. That is why you exercise or diet to lose weight. The activity you do burns (or uses) the calories you consume. Sad that I know this and am still overweight :)

You eat more than you use and so your body turns that excess food into fat storage for a time when we might be without food. It is generally adaptive, but in today's society, where food is never scarce, it has gotten out of control.

eating more calories than you burn in a given amount of time, you dont gain weight hourly or daily, it happens over a period of time, if youre eating less calories than you burn over say a week you will probably lose weight.

you eat a lot and don't burn an equal amount of energy, thereby leaving you with some energy leftover.
this energy, when you sleep, turns into fat, or "pounds"
