Shepherd's Pie Recipe
Ingredients
1-1/2 pounds potatoes, peeled
1 pound roast lamb or mutton, minced
3 ounces butter
1 medium onion, peeled and finely chopped
1/2 pint lamb stock (made from drippings of the roast with the fat taken off)
Salt and pepper
1/4 pint (approximately) milk
Instructions
Preheat oven to 180 degrees C/375 degrees F. Fry the onion in 1 ounce of the butter until lightly browned. Stir the onion into the minced meat and season well with salt and pepper. Add the stock until the mince has a soft, moist consistency. Put into an ovenproof dish and leave to form a skin.
Meanwhile, boil and drain the potatoes. Mash them with at least 1 ounce of butter and enough milk to make them creamy. Season them well. Spread the potatoes over the minced meat, roughen the top with a fork, and dot with the remaining butter. Bake for 30 minutes at the top of the oven so the potato is well browned.
Variations
Worcestershire sauce or cayenne pepper can be added for a hotter flavor. The top can be glazed with beaten egg if a crisper top is desired.
Yield: 6 servings

If you go to www.cooks.com, and type "shepherd's pie" (you'll get better results if you spell it correctly) into the search box that comes up, you'll get several recipes that are all tried and true and submitted by people who like how they turn out. You may even find some with the original ingredient of lamb.
Mine's quite plain, but I'll share. For an 8"x8" or 9"x9" dish, mix enough instant mashed potatoes to make 4 servings, adding about 2-3 more tablespoons liquid than it calls for. Brown about 1 lb ground meat (I prefer chicken or turkey, but beef also works well) and season it as you like. Add a small bag (frozen) or a can of mixed veggies and 1 can of cream of mushroom (or cream of celery or even cheese soup) and stir well. Dump this into the greased or sprayed 8x8 or 9x9 pan, and spread evenly. Spread the potatoes on top. Dot with butter or cooking margarine, then lightly sprinkle with paprika. Bake about 35 minutes (until lightly browned on top and bubbling) at 350 degrees Fahrenheit.
If you prefer a shepherd's pie that holds together a bit better, before adding whatever flavor of soup you prefer, mix one egg and 1/3 cup milk or water into the soup very thoroughly.

First of all, I make homemade mashed potatoes & set aside. Brown 1lb hamburger w/1 onion chopped & drain. Layer hamburger in bottom of deep pie dish or cassarole dish. Pour over 1 pkg frozen peas & carrots & spread mashed potatoes on top. Bake @ 350 for about 30 - 35 minutes. Spread shredded cheese over potatoes & return to oven til cheese is bubbly. Serve with fresh baked rolls & a nice tossed salad.

There are many different ways. This is how I make it: Cook h-burg and sausage on the stove like you would for spaghetti wit a meat sauce. Make sure to cook the sausage like small pellets like the hamburg. Next cook your potatoes and mix them with a blender adding butter and milk for whipped potatoes. When all is cooked and ready to put together this is how you layer: Use rectangle cake pan, meat in first, use 2-3 cans of mexicorn to layer atop the meat mixture, then potatoes atop that evenly. Now I use mozzarella or sharp cheese atop potatoes then a small layer of bread crumbs. Oven on 350 degrees and cook for approximately 30 min or when top is golden brown. Good luck. LL.
