Melt all your cheese in a bowl in the microwave, add a tiny bit of milk or butter to make it more fluid. Add whatever spices you like, like jalepeno juice or something. There's not much else to it

The following is a warm cheese dip that works best if it's served in a small crock pot or fondue pot:
You can start with a cream sauce, which is the base for gravies and cheese sauces. In a jar shake together 1 cup of milk and a Tablespoon of flour or corn starch. Pour into a small sauce pan and add your shredded cheese and cut up or shred your other cheese. You can add as much as you like--I like a lot. Heat over Medium heat while stirring constantly. The cheese will melt. Keep stirring, and the mixture will begin to thicken. When it comes to a slow boil, stir for one more minute, then remove from heat. Your dip should be thick and smooth. (This same recipe will work for gravy by adding beef or chicken broth instead of cheese.)

Hold cheese out at arms length, then slowly bring in while lowering the head.
or try mixing with some salsa in a pan -- the secret to melting cheese , is to keep the heat low and time short. Heat is the enemy of cheese. Consider adding some milk . lots of recipes out there.
