I'd like to make my own shake & bake instead of buying it in the box. Can someone tell me what to put in the bag besides break crumbs.

actually, if you really want a tasty coating for your chicken, put CORN FLAKES in a zip lock bag, then roller over it with a rolling pin until it is all crumbs. In another zip lock bag, put some Italian dressing to coat the chicken, gives it flavor, and something for the corn flakes to stick too....then put the chicken in the crumbs and shake, put in the pan...then I like to spray a little butter flavored Pam over top to make the crumbs crisp up.

I make my own: This is what it consists of:
1 cup whole wheat flour
1 cup corn meal
1 cup fine dry bread crumbs (*if packaged, get the herbal kind)
Now, add seasoned salts, (onion, garlic) to taste
Then add black or white ground pepper, herbs and/or spices of choice (oregano, basil, parsley, thyme, ground sage, ground rosemary, touch of cinnamon, etc)
Coat meat with milk or water, pat dry, roll in SOME of the mix. Whatever mix you do not use in that has touched the raw meat or fish has to be discarded.
Bake as usual.

I use fine bread crumbs, flour AND cornstarch, then hit the spice rack - chicken bouillon, crushed dried onion flakes, salt and pepper, garlic powder, sweet paprika, pinch of cayenne, pinch of curry powder. Makes for the best crunchy chicken ever!
