Shrimp Fried Rice:
Perfect fried rice relies on chilled cooked rice.
3 tablespoons low-sodium soy sauce
2 tablespoons water
2 tablespoons rice vinegar
1 teaspoon sesame oil
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
3 tablespoons vegetable oil, divided
1 1/2 pounds medium shrimp, peeled and deveined
3 large eggs, lightly beaten
2 cups finely chopped green onions
1 tablespoon minced peeled fresh ginger
4 cups cooked long-grain rice, chilled
1 1/2 cups frozen green peas, thawed
Combine first 6 ingredients in a bowl.
Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add shrimp; cook 4 minutes or until done. Remove from pan; keep warm. Heat 2 tablespoons vegetable oil in pan. Add eggs; stir-fry 30 seconds or until soft-scrambled, stirring constantly. Stir in onions and ginger; stir-fry 1 minute. Stir in soy sauce mixture, shrimp, rice, and peas; cook 3 minutes or until heated.
Yield: 6 servings (serving size: 1 1/3 cups)

Shrimp fried rice is a great recipe for nights when you're looking for a quick way to use up leftovers. Feel free to experiment with using fresh mushrooms or other vegetables in place of the peas, and to double up on the ham if you don't have frozen shrimp.
INGREDIENTS:
4 ounces frozen uncooked shrimp, unshelled
Marinade:
1 tablespoon oyster sauce, or to taste
1 tablespoon soy sauce, or to taste
1 teaspoon salt, or to taste
Pepper to taste
1 teaspoon cornstarch mixed with 1 1/2 teaspoons water
Other:
4 ounces cooked ham
1 medium onion
2 green onions
2 eggs (more if desired)
1/2 cup peas
4 cups cold cooked rice
4 to 5 tablespoons oil for stir-frying, or as needed
PREPARATION:
Run the frozen shrimp under warm running water, pat dry with paper towels, shell and devein. Chop into small pieces. Add the marinade ingredients and marinate for 15 minutes.
Dice the ham, onion, and green onion.
Beat the eggs lightly with chopsticks, add a dash of salt, and mix.* Set aside.
Heat the wok and then add 1 tablespoon oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later.
Add 2 tablespoons oil, or as needed. When oil is hot, stir-fry the onion and shrimp on high heat for a few moments, remove and set aside. Do the same for the green peas, and then the diced ham.
Add 1 - 2 tablespoons oil, turn the heat down to medium and stir-fry the rice. Add a bit of soy and oyster sauce if desired. Add the other ingredients except the egg and green onion and combine thoroughly. Serve the fried rice with the strips of egg on top and the green onion as garnish.**
*You can also add a bit of oyster sauce if desired
**Alternately, you can mix the green onion and egg in with the other ingredients.

Comments: The recipe is excellent. Everything is perfect. All my guests enjoyed it. However, I noticed one thing. I live in Dubai (UAE). It's hot out here. The cooked rice may preferably be kept in a cold area immediately after cooking and may be microwaved if necessary before serving. I noticed a difference in the taste as I had cooked it at 12 noon and noticed a difference in taste when I served it at 9pm. I'm hoping to try more of your recipes.
Guide Comments: Preparing fried rice ahead of time gives the ingredients more chance to blend together, making for a more flavorful dish.

This sounds like a yummy recipe, just add your shrimp.
"Fried Rice" - 6 servings
8 slices bacon
1/4 gup diagonally sliced green onions (scallions)
1/4 cup green pepper; cut into thin strips
2 tablespoons chopped parsley
3 cups cold, cooked rice
2 tablespoons soy sauce
1/8 teaspoon pepper
2 eggs; beaten
1) In 10" skillet over medium heat, fry bacon until crisp. Remove to paper towels to drain; crumble and set aside. Spoon off all but 2 tablespoons drippings.
2) In bacon drippings, cook onions, green pepper and parsley until tender-crisp. Stir in rice, soy and pepper. Heat through.
3) Make a well in center of rice mixture. Pour beaten eggs into well. As eggs begin to set, stir lightly with fork so uncooked egg flows to bottom. Cook until set but still moist. Gently stir to mix all ingredients in skillet. Stir in reserved bacon. Yields 4 cups.

Shrimp and Wild Rice
Ingredients:
3 to 4 cups shrimp (cooked and peeled)
One 6-ounce box Uncle Ben's long grain and wild rice
1 can cream of chicken soup
1 small can drained mushrooms
chopped celery
chopped onion
chopped bell pepper
3/4 stick margarine
crumbled Ritz crackers
Cook rice as directed. Saute onion, bell pepper and celery in margarine. Mix all ingredients well and spread into a flat 2-quart (9 x 13-inch) dish. Cover with crumbled Ritz crackers. Bake until bubbly at 350 degrees. Serve with salad.

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.

recipes look good, but don't run warm water over the shrimp, its always got to be cold...warm breeds bacteria.
