I want the recipe for lobster base that they sell at gordon food center or somthing close to it. I was at a lasenorita's restaurant and they use it on their seafood enchilada but they get it from gordon food service and it is to expensive to buy can anyone help me in finding the recipe i have looked all over the internet and can only find lobster bisque and that is not what i want.

Just use a reduced seafood stock. Instead of canned shrimp, you can buy fresh and use the shells to make a stock. Fry shrimp shells in butter for 3-4 minutes under medium heat. Add 1-2 cups water and cook on high until water is reduced by 2/3 or 3/4. Strain out shells. ----edit---- I would actually reduce it even further than I indicated. Lobster base is quite thick, so reducing it down to 1/4 cup liquid would be the way I would go.

"Lobster Base"

1 whole live lobster
2 tablespoons butter
2 tablespoons diced onions
2 tablespoons diced celery
1 teaspoon tomato paste
1 bay leaf
2 oz. brandy
2 cups water

Remove meat from shells. Crush shells; saute with butter, onions, celery, tomato paste and bay leaf. Deglaze pan with brandy; add water. Bring to boil. Reduce heat; simmer 3 hours. Strain broth; return to heat. Bring to boil; reduce to 3 tablespoons.
