A divining rod? I can't say I have much faith in such methods, but I neither do I know of a more scientific method that would work.

I'm not sure what you mean by the question? Find and track underground wells on your property? Are these wells that are already on your property and you want to monitor them? Or are you looking for the best place to put a well? If the latter is the case, I would suggest you take a look at a geologic map.

A geologic map is a crossection of your property's soil. It can tell you many things, one of these things is where the water level is and how far down approximately.
