Italian dressing

1 (475 ml) bottle kraft Italian salad dressing (not low-fat)
1/4 cup vegetable oil (or olive oil)
3 tablespoons fresh minced garlic (or to taste)
1/2 teaspoon black pepper (can use more)


In a large bowl mix all ingredients together with 1/2 teaspoon black pepper.
Add in chicken pieces, cover and refrigerate for 6-8 hours.
When ready to grill, remove the chicken from the marinade and pat dry with paper towels.
Season the chicken with seasoning salt and pepper, then grill.
There is enough marinade for about 10 pieces, or less of chicken.
Delicious!

I have 2 that I have never gotten a complaint about:

1)

Mix together:
1/4 c olive oil
1/4 cup balsamic vinegar
2 tb dijon mustard
2 tb lemon juice
2 cloves garlic, crushed
1 tsp salt
fresh ground black pepper, to taste

Place chicken breasts in resealable plastic bag and pour in marinade. Let soak 2-24 hours and bake in a shallow pan until done. Then you can mix some water or stock with the pan drippings to make a sauce. Yum.

2)
Place chicken breasts on a plate, sprinkle with salt and pepper. Sprinkle 3 tbs olive oil and 3 tbs balsamic vinegar, and turn breasts over to coat.

Mince 2 cloves garlic, chop a handful of fresh rosemary, and add this to chicken. Let marinate one hour, then pan-fry the breasts.
The balsamic vinegar carmelizes and is amazing.

Use any acid (edible) like lemon juice, lime juice or vinegar. Mix with oil. Add any spices that you like. Onions, garlic, fresh ground pepper are just a few examples. If you want, add honey or a bit of sugar to sweeten things up! Never baste your chicken with marinade after the chicken has been in it. Reserve some marinade from the mixture first for basting. Experiment and you will find the perfect marinade for your tastes.

1/4 cup worcestershire sauce
1 tbsp liquid smoke
1/2 cup lemon juice
1 tbsp olive oil
1/2 cup soy sauce
1/2 cup white vinegar
1-2 garlic cloves (chopped)
1 small onion (chopped)
1 can beer or coke (per 3 lbs of chicken), cover meat with liquid

mix all items in bowl (beer last)
pour marinade over meat
cover with a "quick cover" and put in frig for 8-12 hrs
turn meat once after 4-6 hrs

discard marinade after meat is removed!
season to taste

3 tablespoons tomato paste
4-6 tablespoons water
2 tsp garlic powder
3-4 sprigs of fresh parsley
2 Tbls tamari soy sauce
2 Tbls balsamic vinegar
Tabasco sauce to taste
1 tsp grated onion
2 Tbls brown sugar

Put all ingredients in a bowl and mix well. Add chicken and refrigerate for at least 2 hours and up to 24 hours before grilling.

I use Italian salad dressing. Put chicken in a glass bowl (then it won't keep the smell) pour in a bottle of italian dressing. Cover and let sit until the next day. This is the best on the grill.

You can buy a marinade call Mojo marinade in the spanish cooking section of most grocery stores. I highly recomment trying it.

That would depend on how you plan to cook the chicken breasts - If you are grilling them on a Bar-B-Q grill - try a honey Dijon salad dressing - gives the chicken a very nice sweet tangy taste and carmelizes very nicely to give the chicken great color.

Tequila, OJ, lime juice, garlic, olive oil, and chopped green onions. Margarita chicken!

This was always a hit at my restaurant. Sorry I don't have exact measurement, I just eyeballed everything.
