This is one of my Thanksgiving treats. Hope you enjoy.

Sweet Potatoes in Orange Cups

4 oranges
2 1/2 cups cooked, mashed sweet potato
2 tablespoons soft butter or margarine
1/4 teaspoon salt
1/8 teaspoon pepper
Orange juice
1/4 cup brown sugar
Mini marshmallows (optional)

Halve oranges in zig zag pattern. Carefully ream halves, reserving juice. Remove pulp, keeping shells firm.

To mashed sweet potatoes add butter, brown sugar, orange juice to moisten, salt & pepper. Beat until fluffy.

Spoon mixture into orange cups to within 1/2 inch of cut. Add a layer of mini marshmallows. May fill higher & substitute finely chopped pecans for marshmallows

Place orange cups in muffin tins or baking pan & and bake at 350 degrees for 25 to 30 minutes, or until heated through & marshmallows partially or completely melt.

Baked Sweet Potatoes:

6 medium sweet potatoes, unpeeled
6 tablespoons unsalted butter
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

Heat oven to 400° F.

Pierce each sweet potato several times with the tines of a fork. Place the sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 45 minutes.

Make a slit in the top of each sweet potato. Top with 1 tablespoon of butter and season with the salt and pepper.

Variation: Baking sweet potatoes intensifies their sweetness, making them surprisingly satisfying with little, if any, embellishment. If you crave something over the top, try some maple syrup or brown sugar, a spoonful of sour cream, a pinch of ground cinnamon, some caramelized onions, a handful of pecans or walnuts, jarred applesauce or chutney, canned chipotles in adobo, crystallized ginger, or grated orange zest.

Yield: Makes 6 servings

"Sweet Potato-Apple Casserole" - Serves 6

1 1/2 lbs. sweet potatoes
3 apples; cored and sliced
3/4 cup orange juice
1/2 teaspoon cinnamon
1/4 teaspoon EACH allspice and nutmeg
2 tablespoons brown sugar
1/2 cup nuts; chopped

In a medium saucepan, cook unpeeled potatoes in boiling water for about 20 minutes or until tender. Drain.
Meanwhile, in a medium skillet heat apples and orange juice with spices. Cover and cook until apples soften, about 3-5 minutes.
Peel sweet potatoes and slice. Place in casserole dish alternating apples and sliced potatoes. Sprinkle with brown sugar and nuts.
Microwave on HIGH 4-5 minutes.

Wanda's Sweet Potatoes
Ingredients:
6 cups sweet potatoes
1 cup sugar
1 cup butter
4 eggs
2 to 3 teaspoons vanilla
2/3 cup milk
Topping:
2/3 cup melted oleo
1 cup flour
2 cups brown sugar
1 cup chopped pecans
Boil and mash potatoes. Mix and sprinkle topping on top of potatoes. Bake at 350 degrees for 25 minutes

Ever tried sweet potato pie? Find your pumpkin pie recipe, and just substitute cooked mashed sweet potato for the pumpkin. Man, is that good warm with some vanilla ice cream or cold with a big dollop of Cool Whip on top of each serving!

WHY Are They Broke?---This is my favorite!

MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows
In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain. Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Starting with 1/4 cup orange juice, make mixture moist and fluffy. Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top. Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.

Some ways which I fix them are :
steamed, baked and fried. They are very nutritous.
Lately, I have been cooking Croquettes .
Here is a recipe:
Chicken and Sweet-Potato Croquettes Recipe

For the croquettes:
1/3 cup chopped onion
2 tablespoons unsalted butter
1/4 cup all-purpose flour 1/2 cup additional, for dredging the croquettes
1/4 cup milk
1/4 cup chicken broth
2 cups finely chopped cooked chicken or turkey
1/2 cup mashed sweet potatoes
1/8 teaspoon cayenne
Salt and freshly ground black pepper
An egg wash made by beating lightly 2 large eggs with 1 tablespoon water
1 1/2 cups fine fresh bread crumbs
Oil, for frying

In a small saucepan cook the onion in the butter over moderately low heat, stirring, for 5 minutes, stir in 1/4 cup of the flour, and cook the roux mixture over low heat, stirring, for 3 minutes. Stir in the milk and the broth, cook the mixture, stirring, until it forms a paste, and cook the paste, stirring, for 3 minutes. Remove the pan from the heat, stir in the chicken, the sweet potatoes, the cayenne, and salt and black pepper, to taste, and combine the mixture well.
Chill the chicken mixture, covered, for 2 hours, or until it is firm, and roll level tablespoons of it into balls. Dredge the balls in the additional 1/2 cup flour, shaking off the excess, coat them thoroughly with the egg wash, letting the excess drip off, and dredge them in the bread crumbs, transferring them to wax paper as they are coated. The croquettes may be made up to this point 1 month in advance and kept wrapped well and frozen. Thaw the croquettes for 1 hour. If serving the croquettes immediately, let them dry at room temperature for 1 hour.

In a large saucepan heat 2 inches of the oil until a deep-fat thermometer registers 365 degrees F. Fry the croquettes in batches for 1 to 1 1/2 minutes, or until they are golden brown, and transfer them with a slotted spoon to paper towels to drain. Serve the croquettes with mango chutney, if desired.

There are a dozen very delicious ways to fix sweet potatoes. You can with the peeling on coat the peel with lard/shortning then wrap the sweet potato in foil then either bake on bbq grill or in the oven.
Also can boil then like regular potatoes.

I like to make sweet potato burritos. I peel and cut up a sweet potato and boil it with a few cloves of garlic and put both in a tortilla shell with other burrito fixins.

Well, I am not really keen on sweet potatoes, but when I was in Canada my friend cut them thinly with the skins on and baked them in the oven in a little olive oil. I must say that they were delicious.
