They were sliced yesterday and left in a sealed container in the fridge overnight but today they are greyish in colour. I think they'll be OK to eat as long as they're cooked - does anyone know any different?

Once cut, uncooked potatoes can take on bluish or dark tints. Potatoes that become discolored in this way are safe to eat, and the color usually disappears when the potato is cooked. To prevent cut potatoes from discoloring, immerse them in cold water until ready to use, for up to two hours. However, extended storage in cold water is not recommended as it can result in loss of some of the potatoes’ water-soluble nutrients.

Potatos produce toxins if left overnight, they should be stored in water with lemon juice added to keep them clean and white, even then they may go soft.

Just rub some turtle wax on them and it'll take that oxidation right off. It'll give it a nice beautiful shine too!

|You can't eat them if they're green - even just slightly. I'd peel yourself a few more potatoes if I was you!
