It refers to gypsies at the turn of the century who would play a mechanical organ and have a monkey (and sometimes a young boy) collect the money from the audience, while the monkey would be "a show" by itself because it would be exotic to most, it didn't stop the organ grinder from playing. Applied to the business industry it means that the "team" survives even if a "monkey" (co-worker) leaves. No one is irreplacable.
