In my daughter's homeschooled course, I had thought of an out-of-class indepedent reading assignment that would be completed every week. Here's my idea:
1) Read 150 minutes each week (30 minutes per day, 5 days)
2) After each daily reading, write a short paragraph on what you read today.
3) When you are done with a book, write about one of the following:
a) a critical analysis of the book
b) a plot summary of the book
c) a book report answering discussion questions relevant to the book
I know that it's independent reading, but she still should have to analyze the book to get the most out of it.

I would suggest adding a component that deals with her applying what she learned. In other words, have her write a short paragraph on how the book or whatever reading assignment you give her applies to her daily life, or our society. This will get her thinking about the world around her, improve her writing skills, and make her more of a critical reader.

I do something similar with my (11yo, 6th grade) son. Every day, he works on reading a classic of literature of his choosing from a booklist (he's currently reading Tom Sawyer). When he finishes the book, he either writes a book report (basic summary of the plot, characters, setting, etc.) or a book review (what did he like about the book, what didn't he like, why?, to whom would he recommend the book?, etc.) He only writes about the book when he finishes it (not daily - he has other writing assignments). He also does LOTS of independent reading outside of school.
I like the idea someone mentioned about applying it to his life - or, what does it say about life today (as opposed to when it was written). After all, that's what makes them classics, right?

I think number one is good and number three is great, but maybe you shouldn't do 2 every day. It might make reading into a negative experience, so your daughter wouldn't want to read when it's not required anymore. I also wouldn't do three on every book she finishes, just the ones she counted for her 150 minutes each week (I'm just saying this because, personally, I read a lot, and I wouldn't want to write about everything I read.)
