* 1 pound butter
* 1 pound sugar
* nuts

Melt butter. Add sugar and cook until the mixture turns to light brown. It will turn yellow first. Be patient. When it gets to the hard crack stage [300° to 310°], pour into a buttered pan. Add walnuts, or any nuts.

Our favorites are macademias! Butter waxed paper and place on cookie sheets. Pour mixture onto the waxed paper and let harden and then crack into pieces.

This is truly wonderful! Peanuts or walnuts work just as well, or any of your favorites - cashews are fantastic.

Almond-Toffee Chocolate Chip Cookies:

Prep: 30 min., Bake: 14 min. per batch

3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 cup semisweet chocolate morsels
1 cup almond toffee bits
1/2 cup slivered toasted almonds

Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.

Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels, toffee bits, and almonds. Drop by tablespoonfuls onto lightly greased baking sheets.

Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.

Yield: Makes about 5 dozen

INGREDIENTS
1 cup butter
1 1/4 cups white sugar
2 tablespoons water
1/4 cup slivered almonds
1 cup chocolate chips
DIRECTIONS
Butter a 10x15 inch jellyroll pan. In a heavy skillet, over medium heat, melt butter. Stir in sugar and water. Bring to a boil and add almonds. Cook, stirring constantly until nuts are toasted and the sugar is golden. Pour the mixture into the prepared pan and sprinkle the chocolate chips on top. Let stand for a minute then spread the chocolate over the top. Let cool completely then break into pieces.

Place an unopened can of condensed milk in a pot of water. Bring to boil and simmer for approx 3 - 4 hours. Leave to cool and when you open the tin it will have turned to a yummy toffee

"Toffee" - 3 dozen candies

1 cup pecans; chopped
3/4 cup brown sugar; packed
1/2 cup butter or margarine
1 (4 1/2 oz.) bar milk chocolate candy; broken into pieces, or 1/2 cup semisweet chocolate pieces

Butter square pan, 9x9x2". Spread pecans in pan. Heat sugar and butter to boiling, stirring constantly. Boil over medium heat, stirring constantly, 7 minutes. Immediately spread mixture evenly over nuts in pan.
Sprinkle chocolate pieces over hot mixture; place baking sheet over pan so contained heat will melt chocolate. Spread melted chocolate over candy. While hot, cut into 1 1/2" squares. Chill until firm.

Dead simple recipe. 2 tbls sugar, 2 tbls vinegar, 2 tbls marg, 2tbls syrup. boil together til colour changes to quite dark or when a half teas dropped into cold water goes hard. pour into 6"x6" tin, cool, eat, enjoy!!
