Depends on what you are making.
If you are frying chicken pieces, then cast iron.
If you are doing eggs, you want teflon.
If you are doing steak, you want one that has raised ridges.
If you are frying bacon, you could use aluminum or steel.

Teflon. Things tend to stick too much in other pans but, they don't brown very good. Sometimes I cook with the Teflon pan then toss it into another pan fro browning.

I'll not squabble with those who favor cast-iron, I like cast-aluminum as well.
However, I probably most often use teflon.
Does anybody remember T-fal? It was evidently a 'mistake' - from Boeing. At the time, I liked that even better than teflon... as the demonstrations proclaimed, you could fry an egg - without butter - without it sticking to the pan, or if you scalded milk, you could roll it right out.

Cast Iron Skillet, maintains the heat, virtually non stick if seasoned right and you can cook with it on any source of heat from stove top to campfire. I've been using my Grandma's for over 30 years along with ones I've bought. I have the other pans and they're great for every day cooking but for frying? Cast Iron

anodized aluminum ...i hate stainless, too light....anaozided aluminum keeps heat well, transfers it to food well, its thick, but light (aluminum is a wonder metal) and you can get in non-stick or regular...i got cephelon..it was a cusomer report's best buy...get a subscription to their site, i think its $25 a year..i used it to buy pots and pans, a vacum, a tv, an air conditioner...they are usually right on
don't get teflon! it wears off too easily

Stainless steel for deep and shallow-frying.
Teflon for sauteing, roasting and making pancakes, omelettes.
