what is the substitute of wine, brandy, sherry , which are used at large in cooking nowadays?

I've always seen water as the substitute, but chicken broth is certainly more flavorful.

Well, there's non-alcoholic wine. Or it can be omitted entirely. Or a little chicken broth. I've seen all those suggested in recipes.

If you do not wish to use alcohol, then substitute broth (chicken, beef, veggie, etc).
