Corn on the cob. You "walk slowly" to let the sugar develop: i.e., don't be in any hurry to pick the corn before it's truly ready.

But it starts to deteriorate in flavor the minute it's picked, so you run back to the kitchen -- that is, cook it as soon as possible.

This is true for many vegetables but especially sweet corn!

I'd say some kind of mushroom since you have to hunt for them.
