My husband and I made pumpkin rolls last year. At the point where we spread the cream on the cake and went to roll it up, the cream went everywhere. It was so messy that we got discouraged and haven't tried to make pumpkin rolls since. It tasted really good, the cake consistency was great and the cream was yummy. What did we do wrong? Is there any way to make it neater? What do you do when you make those rolled up kinds of desserts to keep the cream or filling from going all over the place? Thanks in advance!

Sounds like you put the cream too close to the edges before rolling. Try leaving about 1 or 2 inches uncovered before rolling.

I think making these rolls is always a little messy, but spreading your filling within about an inch of the edges. Make sure your filling is little on the chilled side as well, that will help it stay in place. Try rolling your roll slightly looser not so tight, the filling could be pushing out due to your pressure of rolling.

When it is rolled place it seam down on your tray, but first trim the sides. If the filling was uneven this will hide that fact.

Lastly eat the trimmed sides. After all you have worked very hard.

spread it fairly thin-you don't need much to make the roll plenty sweet. if it was squeezed out the edges, then you put it too close to the edge, try leaving space on both sides. you may have been trying to roll it too tight, squeezing the icing as you rolled. it should be a fairly loose roll. were you using a towel to help start rolling? a towel is a lot easier to use than wax paper, for me anyway, and it keeps the cake together better, so that it doesn't split when you roll it up.

Pre-roll the cake. Then apply cream and re-roll the cake.

maybe the cake you rolled was too thick? in which case as you rolled it, it kind of pushed all the stuffing everywhere... how big was the cake? if you baked it yourself you may want to split the mix into two tins

Was the cake still warm/melted the filling?
