Tiramisu
Italian dessert
Genoise sponge:
3 1/2 ounces (110 grams) caster sugar
4 eggs
1 3/4 ounces (50 grams) melted butter
3 ounces (85 grams) plain flour
1-ounce (30 grams) good-quality cocoa powder
Filling:
1 pound 1-ounce (500 grams) mascarpone
2 1/2 ounces (70 grams) caster sugar
2 egg yolks*
3.5 fluid ounces (100 milliliters) Vin Santo
4 to 5 shots espresso coffee
Tia Maria liqueur
3 1/2 ounces (110 grams) good-quality white chocolate, melted
Cocoa powder, for dusting
1 bar good-quality dark chocolate, for shavings
First make the sponge. Preheat the oven to 350 degrees F (180 degrees C /gas 4).
Whisk the sugar and eggs until they are at ribbon stage. Fold in the melted butter, then fold in the sifted flour and cocoa. Pour the mixture into a lined Swiss roll tin and bake in the preheated oven for 10 minutes. Remove the sponge from the oven when it is done and leave to cool.
To make the filling, put the mascarpone, sugar, egg yolks, and Vin Santo into a bowl and mix until smooth.
To assemble the tiramisu, break up the sponge and press it into the bottom of a shallow dish. Drizzle over the coffee, Tia Maria, and white chocolate. Spoon over the mascarpone filling, then dust liberally with cocoa. Using a large knife, scrape the chocolate towards you to make shavings and arrange these delicately over the top.

"New England Boiled Dinner" - 8 servings
1 (3-lb.) corned beef brisket
16 small white onions; peeled
8 small potatoes; peeled
8 medium carrrots; halved crosswise
1 rutabaga or 2 turnips; peeled and cut into wedges
1 medium head cabbage; cut into wedges
Prepared mustard
Horseradish sauce (recipe follows)
1) In 6-quart Dutch oven or large pot, place corned beef and enough water to cover. Over high heat, heat to boiling. Reduce heat to low. Cover; simmer 1 1/2 hours or until meat is nearly tender.
2) Add onions and potatoes. Cover; simmer 20 minutes. Add carrots and rutabaga. Cover; simmer 15 minutes. Arrange cabbage over all. Cover; simmer 15 minutes more.
3) To serve: Place meat on platter; arrange vegetables around meat. Spoon a little cooking liquid over vegetables. Serve with mustard and Horseradish sauce.
HORSERADISH SAUCE:
1 cup sour cream
1/4 cup mayonnaise
1/4 cup prepared horseradish
1/2 teaspoon salt
1/2 teaspoon prepared mustard
Dash white pepper
In medium bowl, stir together all ingredients. Yields 1 1/2 cups.

Chicken tenders
bread sliced chicken breast in italian bread crumbs first dip them in egg and hot sauce mixture then into progresso italian bread crumbs
when done set deep fryer for 15 mins to heat up put on 450 and throw 8-10 pieces at a time in and ur good to go then deep fry a bag of french fries or onion rings get them nice and crispy by letting them touch the oil and then pull them up and then wait 2 min and put them back down until golden brown color and crunchy no salt is necessary

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

Tacos! (which is mexican)
It is easy, takes small amount of time to prepare and cook and everyone seems to love them!
You can get people to choose their own fillings.
You just buy 500g mince meat, taco kit, lettuce, tomato, cucumber and a can of corn, shredded cheese. (also carrot optional)
Fry mince in saucepan until cooked. Add shredded carrot if you like. Add the taco seasoning that is in the kit along with 3/4 cup of water. *** Note - if you dont like spicy food just add half the packet of seasoning with the 3/4 cup of water. Thats what i do because my kids dont like spicy food at all)
Then you just simmer that in saucepan for about 5 minutes.
Cut up tomato, lettuce, cucumber, open can of corn, and open the pack of taco sauce that comes in the kit.
You can have hard taco shells which heat up in the oven in 5 minutes. Or soft taco shells, which you microwave for only 40 seconds (i think - just check the packet instructions)
Add your favourite fillings. Sprinkle with cheese. Enjoy!! Yum
