My mother has diabetes and has a difficult diet; on top of that, she hardly has the time to eat a proper meal. Is there anything that is nutritious, easy to prepare and to eat on-the-go?

Raw nuts, Seeds, Beef Jerky, Wholegrain sandwiches with egg or meat salad etc

Put 1-cup Ziplock container on a scale and add 1 ounce of peanuts and 1 ounce of cut-up beef jerky . . around 12 carbs. 1 ounce string cheese sticks have around 1 gram of carbs. "Great Value" brand of sugar-free jello at Wal-Mart is carb-free . . keep numerous cups refrigerated. Some brands of aerosol can whip cream have around 1 gram of carbs per 2 tablespoon serving.
