It predates Christianity to the time of Pythagoreas, when it was known as the Vesica Pisces.
It was adopted as a Christian symbol because Christianity was really about the dawning of the new age of Pisces. This has been proven beyond a doubt through an archaeological discovery about a year ago of the Pisces symbol at the focal point on the floor of an early Christian church.

Jesus was born at the onset of the Age of Pisces. I heard
the fish symbol came down from the sign of Pisces. And
recently, in tre oldest Christian church found in Jerusalem, the sign of Pisces, (two fish), was found on the floor.
Some say the fish symbol came from Romans as a way of
revealing they were Christians during persecution days. And it
comes from some Latin words. I have to research into this
and see if these symbols really mean those things, or if
people just believe what they're told to believe.

The fish represents many things, Pisces, the element of water, the salmon of knowledge and the realm of Sea, which itself is representative of the All. It's a very powerful symbol.
I have no idea why it has anything to do with Christianity, but I don't really care much either.

well there is the Jesus fish, so i dont know why others may tell you it is a pegan symbol.
but then again Christianity and the whole church have stolen and used soo many symbols over their history (see Christmas) that it wouldnt be hard to imagine the fish as being stolen as well...
