The egg is a versatile food - you're right; BUT don't forget the Olive.. Generally speaking, you can't season things with an egg. Like the egg, You can cook olives in many shapes and forms, and you can also use an olive and its extracts for seasoning.
I think Pepper is a very versatile seasoning. and Basil (or perhaps Oregano) is the most versatile herb in my opinion..

TOFU!!! Let me explain: you can make shakes from it, you can scramble it, you can make cake out it, you can fry it, you can make pudding, you can marinate it and it can take on the flavor of what it marinated in, etc...! This is definitely a versatile ingredient and ties with the egg in my book.

vanilla, its found it small amounts in tons of recipes. it doesn't seem important, but if you leave it out things taste very bland or worse.
