To slow the ripening process once bananas reach your preferred ripeness, put them in the refrigerator. Even though our original jingle warned consumers not to refrigerate bananas, it's really OK. The skin may turn dark, but the fruit will be just right for several days. Back in 1944 when the "Chiquita Banana" jingle lyrics were written, consumers would typically bring home green bananas and put them in the refrigerator which kept them from ripening properly.
"I'm Chiquita banana and I've come to say,
bananas have to ripen in a certain way...
so you should never put bananas in the refrigerator....
No, No, No, No"

I personally love cold bananas. If you like them cold, ice them. Refrigerating bananas doesn't affect their nutritional value at all.

Applying my experiences with refrigerating banannas, the only detriment with refrigerating / chilling banannas is that the peel (skin) will quickly turn brown!
The consistency of the meat of a bananna really "controls" the nutritive value of it.
I believe that the "strings" (texture inside the meat-portion) are adversely effected by how the fruit is stored and for how long.
I do know that fresh banannas stay "FRESH" for only a short time-span.
It could be the excessive Potassium level.

Avoid refrigerating unripe bananas, as they will never ripen.
Mash and freeze ripe bananas, in one-cup portions, or freeze whole, peeled bananas in plastic bags, for use in later baking.

if the bananas aren't ripe yet then no. because it slows down how long it'll take to rippen. it doesn't effect the nutritional value but it does tast better if you do buy green bananas and wait for it to rippen yourself. the flavor is richer.

If you refrigerate bananas their skin will turn black but it does not alter the taste at all. I don't know if it alters the nutritonal value

It won't affect the banana...but the peel's odor will seep into your other food. It's very strong and will get caged into your fridge.
