A darn good beating that the egg did nothing to deserve, It was just in the wrong place at the wrong time. have fun.

Once egg whites get white and fluffy, those are just whipped egg whites. There are two or three stages of thickness that you can make egg whites once they are whipped. The first one is soft peak egg whites. You whip them until you take the whip attachment out of the bowl and hold it at the base and the egg white mound on top will form a tip and the tip will droop down. Medium peaks are when the tip of the whites on the whip attachment hold a little longer. This results from whipping the whites a little longer. The more you whip them, the firmer they become. The last stage is stiff peaks. This is where you whip it enough so that when you flip the whip attachment so you see the tip of whites on top, the tip stays put. You don't want to whip it any more than that. I hope this helped a little. Happy cooking!

I thought of meringue also, but to be meringue, you have to add a little sugar to it. But other recipes say to beat egg whites until soft or stiff peaks form (when you lift the beaters out) and then that is folded into other ingredients. I have never heard of a name given for that. But, a good tip, if you have a recipe that asks for beaten egg whites, let the egg whites come to room temperature. They will whip up easier, faster, and the end result will be fluffier.

FLUFFING the egg.
Whenever you see an ingredient listing as "fluffed" it usually requires a whipping-motion (commonly, inside a bowl) that "pushes" air into the mixture from the ingedients' under side.
