"This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well!"
INGREDIENTS:
1 recipe pastry for a 9 inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced
DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

This takes a bit of time but it's well worth it. the cooking of the apples gives it a great flavor. i also suggest you be careful when you're pouring the liquid from the cooked apples into the pecan flour etc mixture. do it gradually do you won't over due it. oh and you might need two deep dish pie crust if you use medium apples instead. you can omit the pear just add in another apple.
10 -12 Small Gala Apples
1/2 cup sugar
1/2 cup brown sugar
1 tablespoon Cinnamon
1/4 teaspoon Nutmeg
1 pear
1 ready-made refrigerated pie crust (or your own)
Topping:
1 1/2 cup flour
1 cup ground pecans
1 cup brown sugar
4 tablespoons butter (melted)
Peel and chop (small) at least 10 apples, place in cold water as each apple is cut. Drain completely. Place in pan on stove over medium heat. Add sugars, cinnamon and nutmeg. Cook for 30 minutes, stirring occasionally. While apples cook down, begin to make topping.
In a mixing bowl, combine flour, pecans, and brown sugar. Pour butter over and mix.
Peel and chop pear, add to apples and mix. Turn heat off under apples. Roll out pie crust. Place in pie pan. Crimp edges of dough. Spoon apple/pear mixture into pie crust with slotted spoon. Reserve the liquid from this mixture to gradually pour over the topping mixture mixing well after every addition. The mixture should turn out crumbly. Once you have done this place topping mixture on top of apple/pear mixture already in pie crust.
Place pie in preheated 350 degree oven for 35-40 minutes. Enjoy.

Do you need a recipe? I usually wing it -- cut up & peel enough apples to over fill the pan. Mix them with 3/4 cup sugar (if sour apples like granny smith) or less if sweet apples, 2 tablespoons of flour for thickening, 1 teaspoonful of cinnamon & a dash of nutmeg. Roll the dough out, put it in the pan, add the apple mix, roll out the top dough, crimp the edges, make a few small cuts in the top crust & sprinkle it with sugar & cinnamon mix. Put it in an oven at 400 F for 15 minutes, then lower the temp to 350 & cook it about 30 more minutes. It is done when the filling bubbles (you'll see it near the edge),

Apple-Pecan Pie Cobbler:
6 large Granny Smith apples, peeled and sliced (about 3 pounds)*
1/2 cup firmly packed light brown sugar
2 tablespoons all-purpose flour
1/4 cup butter
1/2 cup dark corn syrup
Pecan Pie Muffin Batter
Toss together first 3 ingredients in a large bowl.
Melt butter in a large skillet over medium-high heat. Add apple mixture and corn syrup to skillet; bring to a boil, and cook, stirring often, 10 minutes. Divide hot apple mixture evenly between 6 lightly greased 6-ounce ovenproof ramekins or custard cups. Spoon Pecan Pie Muffin Batter evenly over hot apple mixture.
Bake at 425° for 15 to 20 minutes or until golden brown.
*3 (12-ounce) packages frozen, cooked apples, thawed (such as Stouffer's Harvest Apples), can be substituted for Granny Smith apples. Proceed with recipe as directed.
Yield: Makes 6 servings

There are tons of good receipes for apple pie. Get canned apple and look on the label.
NOW, if are really asking for a good apple pie, take this advice.
1) Make you own crust cutting in lard and flour for the crust. Makes an excellent old fashion crust.
2) Fresh apples like macintoshes, cut and cored for the filling

OLGA's PIE CRUST:
4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cup Crisco Shortening
1/2 cup cold water
1 Tablespoon vinegar
1 egg
Stir the flour, sugar and salt together in a medium size bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. In a small bowl beat together water, vinegar and egg. Add to flour mixture until the dough comes together. Gently gather dough particles together into a ball. Wrap in plastic, and chill for at least 30 minutes. Divide into 4 balls. Lightly flour sides of the ball and roll out on lightly floured board or pastry cloth. Makes two 9-inch double-crust pies.
Note: Dough can be refrigerator up to 3 days. It can be frozen until ready to use; thaw until soft enough to roll.
OLGA's APPLE PIE:
6+ cups Cortland apples
2 tablespoons lemon juice
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
dash nutmeg
dash salt
1/4 cup flour
2 Tablespoons butter
Wash, peel, core and slice apples, toss apple slices in a large bowl with lemon juice to prevent darkening. In a small bowl combine sugar, brown sugar, cinnamon, nutmeg, salt, flour. Pour over apple slices and stir to mix well. Arrange apple slices in pastry-lined pie pan. Dot with butter and place top crust on pie, seal and flute edges. Cut slits in the top to permit steam to escape. Bake at 450 degrees for 15 minutes. Continue baking at 350 degrees for 45 to 50 minutes or until apples test soft with a fork and the crust is golden brown.
Place a cookie sheet covered with aluminum foil on lower rack in oven to catch drippings.

Theses all sound like great recipes -- but I recommend always using a glas pie plate and make sure you butter the plate BEFORE putting down your bottom crust - your crust will always be nicely done on the bottom

Apple Praline Pie
An apple pie loaded with the sweet flavors of brown sugar, spices and pecans.

Makes:8 servings
INGREDIENTS
Pastry
2 2/3cups Gold Medal® all-purpose flour
1teaspoon salt
1cup shortening
7to 8 tablespoons cold water
Filling and Topping
1cup granulated sugar
1cup chopped pecans
1/3cup Gold Medal® all-purpose flour
1teaspoon ground cinnamon
1teaspoon ground nutmeg
1/4teaspoon salt
8cups thinly sliced peeled tart apples (7 medium)
3tablespoons butter or margarine
1/4cup packed brown sugar
2tablespoons half-and-half
DIRECTIONS
1.In medium bowl, mix 2 2/3 cups flour and 1 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
2.Gather pastry into a ball. Divide in half; shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
3.Heat oven to 425°F. With floured rolling pin, roll one pastry round into round 2 inches larger than upside-down 10-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
4.In large bowl, mix granulated sugar, 2/3 cup of the pecans, 1/3 cup flour, the cinnamon, nutmeg and 1/4 teaspoon salt. Add apples; toss to coat. Spoon into pastry-lined pie plate. Cut butter into small pieces; sprinkle over apples. Trim overhanging edge of pastry 1/2 inch from rim of pie plate.
5.Roll other round of pastry into 11-inch round. Fold into fourths and cut slits so steam can escape. Unfold pastry over filling; trim overhanging edge 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute as desired. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning.
6.Bake 50 to 60 minutes or until crust is brown and juice begins to bubble through slits in crust, removing foil for last 15 minutes of baking.
7.In 1-quart saucepan, place brown sugar, remaining 1/3 cup pecans and the half-and-half. Cook over low heat, stirring constantly, until sugar is melted. Spread over hot pie. Serve warm.

5 to 7 Tbsp. ice cold water
6 cups thinly sliced peeled tart apples (about 4 large apples)
3/4 cup sugar
1 Tbsp. cornstarch
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 Tbsp. lemon juice (optional)
PREHEAT oven to 400°F. Mix flour and salt in large bowl. Cut in shortening using a pastry blender or 2 knives until mixture resembles coarse crumbs.
ADD water, 1 Tbsp. at a time, mixing lightly with fork until flour mixture is evenly moistened and clings together when pressed into a ball. Divide dough in half; shape each half into 1/2-inch-thick round. Wrap each dough round in plastic wrap; refrigerate 10 to 15 min.
MEANWHILE, toss apples with sugar, cornstarch, cinnamon, nutmeg and lemon juice in large bowl; set aside. Place 1 dough round between 2 large sheets of plastic wrap; roll out dough with rolling pin to flatten slightly, working from center of dough to the edge. Turn over; continue rolling until dough round is about 2 inches larger than diameter of inverted 9-inch pie plate.
PEEL off top piece of plastic wrap; invert dough into pie plate. Peel off remaining piece of plastic wrap; press dough evenly onto bottom and up side of pie plate, being careful not to stretch the dough. Trim any dough hanging over edge of pie plate with sharp knife or kitchen scissors; reserve trimmings.
FILL with apple mixture; set aside. Roll out remaining dough as directed; place over filling. Trim top crust about 1/2 inch beyond edge of pie plate. Fold edge of top crust under edge of bottom crust; pinch edges together to form a ridge. Flute edge (see Tip). Cut several slits near center of pie to allow steam to escape.
BAKE 45 to 50 min. or until juices form bubbles that burst slowly. Cool.
Decorative Crust
Use small cookie cutters to cut-out decorative shapes from the top crust or the leftover pastry trimmings. Arrange on top of crust.
Finishing Touches
Brush top of crust with lightly beaten egg white before baking (for shiny top), a whole egg (for golden brown top) or brush with beaten egg and sprinkle with 1 Tbsp. granulated sugar (for a sparkling top).

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C.) Arrange apple slices in unbaked pie shell. Mix 1/2 cup sugar and cinnamon; sprinkle over apples.
Mix 1/3 cup sugar with flour; cut in butter until crumbly. Spoon mixture over apples.
Bake in preheated oven for 35 to 40 minutes, or until apples are soft and top is lightly browned.
Caramel Apple Pie II
INGREDIENTS
1 recipe pastry for a 9 inch double crust deep dish pie
1/2 cup packed brown sugar
1/4 cup butter, melted
1/3 cup all-purpose flour
5 cups thinly sliced apples
2/3 cup white sugar
3 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon lemon juice
20 caramels, halved
2 tablespoons milk
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
To Make Taffy: In a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour. Mix well and set aside.
To Make Apple Filling: Place apples in a large bowl. Add white sugar, 3 tablespoons flour, cinnamon, and lemon juice. Toss until all ingredients are mixed well and apples are thoroughly coated.
Spoon half of apple filling into pastry-lined deep-dish pan. Top with half of caramels and half of taffy mixture. Repeat process with remaining apple filling, caramels and taffy mixture. Place top pastry over filling and seal well (this is very important--if edges are not sealed, caramel will leak out all over). Cut steam vents and brush top crust with milk or light cream.
Cover pie with foil and place on a baking sheet. Bake in preheated oven for 25 minutes. Remove foil from pie and bake for another 20 to 25 minutes, until crust is golden. Serve warm.
Easy Apple Crisp
INGREDIENTS
6 apple - peeled, cored and sliced
1 cup water
1 (18.25 ounce) package white cake mix
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Arrange apples in an even layer in bottom of baking dish. Pour water over apples.
In a medium bowl mix together cake mix, brown sugar, and cinnamon. Stir in melted butter or margarine until ingredients are thoroughly blended; mixture will be crumbly. Sprinkle mixture over apples.
Bake in preheated oven for 50 to 55 minutes.
